No yields are great, the thing is I spend too much time growing and not enough marketing. Pretty much every restaurant we have gave samples to ended up buying from us. I just dont have the time to hit more.

Thanks so much for the forthright info.  I've started a few small enterprises and know just what your saying.  Most don't know that feeling of not being a "slave", and your right, Better to fail with your hands dirty and heart out stretched, than the other way around.  Keep going if it suits you, I'd like to know more if you'd care to.  I started reading here for the less than edible mushies and found myself hooked on the science of it all and then thought why not try it.

Have you considered purchasing spawn from a commercial supplier? Most of the commercial mushroom farms purchase spawn for the exact same reasons you listed. Even if the farm is big enough to produce its own spawn, it is usually run as an entirely separate entity.

It would cut down a lot of your time, allow you to inoculate more substrate and use the extra time to do the marketing. In a way it is like hiring an employee, but you don't have to pay for worker's comp, FICA, social security taxes, etc...

Just my 2 cents...
