Permits AUS and NZ
I can't imagine that very many people would bother getting a permit. I think that its just another example of burocracy at work

I'm pretty sure I've heard rangers pulling over and checking out my car suspiciously, or I could just be paranoid and it was someone doing a really slow U-turn where I parked.
& Once I heard someone pull up and get out of their car so I walked back to my car coz' I had nothing.
It was 2 old bush walkers who decided to get back in their car and make a phone call when they saw me (I had my hood on so I looked a little suss, I think they were scared).
I just don't actually pick anything until I'm ready to leave the area and ALWAYS make sure I keep my camera out and have heaps of nature photos on it.

Yeah ive had a ranger drive right up to me while i was looking through one of my patches, i didnt notice him pulling up. When i saw him he looked straight at me and gave me a nod and drove off. Either he didnt know what i was doing or he didnt care. Another time this sneaky old man came up to me while i was taking a photo of a sub. The stealthy bastard didnt make any noise until he was right behind me and said 'You doing some research are ya?' I nearly had a heart attack. I just said yeah for uni and he replied 'What a good young man, good on you!' 
If only he knew
Also, id imagine having a permit would be a good way to get out of a questioning by cops. Just show them you're a licensed mushroom gatherer and they would pretty much leave you alone, as long as you have a variety of species in your bag.

Funny enough I have a Polish Granny who tells me stories about collecting mushrooms to eat.
They have a wood carving at home with some Amanita Muscaria's and Psilocybe looking shrooms on it that she said make you "sick" if you eat them  - I will have to get a photo next time I am there.

when i was walking back to my car, a 4WD pulled up and 3 undercover cops jumped out, they came over to me flashed their badges and started questioning what i was doing, i said hiking but they said that i was in a "Suspicous Area". I had hiking shoes, backpack, lunch and maps etc. but they still searched me, and then searched the car. I only had about 10 shrooms in the car but the cops didnt find em.
They found weed though and i got a cannibis caution. But no shroom infringement thankfully.
There are undercover cops out there, looking for shroom hunters. Keep an eye out for them.

haha yeah it rained here for around 10 minutes... well not so much rained as lightly sprinkled, and only when i had to ride home, in the past 6 weeks it has not rained once, when it does, it spits, and only on the one day i ride. FML
