Psathyrella aquatica. Only gilled mushroom known to fruit under water.

Have you maybe considered bioluminescent shrooms. there are several species out there that "glow" in the dark... I did pretty much the same thing you are doing, in college, and I always got a bunch of ohs and awws when the lights went out and you could see glowing buddies. If you have the lab equip, they are by far some of the best to grow/show...

Yeah I believe the folk term for glowing fungi is foxfire. So freakin' cool. I wonder if anyone's tried growing it?

Cordyceps are very interesting, though a bit creepy when you consider the parallels between the erratic behavior of the insects and myths/ideas like zombies.

That was my first reaction on seeing them also! Apparently they are extremely rare, known from only two localities, and that pic is the the first (and perhaps only) color photograph of them.

Psilocybe semiinconspicua is only known from one locality, thus rarer in a sense.

Lactarius Indigo. Fairly common, but also pretty awesome looking!
It's bright blue, and oozes a blue latex, that turns green with oxidation.

I've seen yellow goo grow on a contaminated BRF cake before but I had no idea something like this grew wild in nature. 
Heres some more interesting fungi
Chorioactis geaster

Octopus stinkhorn fungus

Sea anemone fungus
