My "Too much Garlic" Pasta

This is a recipe i sort of came up with out of a whim, and an excess amount of garlic.


Let's begin!


Slice and sautee some italian sausages (i'm using escharrol-garlic-pork)




Minced Garlic




Add:




let it sweat for a couple minutes.



Pasta! Oh look it's fettuccini again...Why? Because I LOVE FETUCCINI.





notice how i captured the live-action shot of me seasoning the water. Very very crucial to ood tasting pasta is a heavy dose of salt in the water.



Now...while everything's cooking, i'd like to talk to you about olive oil.


People may not think it's worth it, but it does help alot to actually go out and shop around for HIGH QUALITY olive oils, which can do alot to adding flavor to your sauces and pastas and whatever else you may use it to flavor.




There are places which provide oil-tasting, so you can really begin to appreciate the differences between your joe-shmoe brand (behind), and the REAL DEAL (upfront).




So....onto the roasted garlic.

I'm using two heads, peeled the outer two layers so that all that's left are the individually skinned cloves.

Drizzle olive oil, cover in foil, and put in a 400 degree oven for 35 minutes or untill they're soft and carmelized.




Let it cool.


In the meantime, throw in your sauce (i'm using homemade vodka cream sauce , which consists of sauteed shallots, vodka, heavy cream, tomato puree).

Throw in the cooked pasta:




Add the roasted garlic cloves:




Make sure to mesh them down so that they incorporate into the sauce.


Mix:




let it simmer a little bit.

Top with parmesian (nothing beats freshly grated cheese)



Mix, and eat:





Your breath will stink horribly. But when you're diggin in forkfulls of sausage and roasted garlic flesh, it makes it aaallll worth it.

Looks good. Ive been using some good avocado oil recently. The flavor difference is really noticeable and the high smoke point comes in handy

Nice dude, cool recipe. Garlic is amazing, I use it a ton. I like that concept, might have to do something similar sometime :laugh:

just about 2-3 cloves


although it was a bit excessive. I'd usually just use it to flavor the cooking oil and then throw it out.

I made this for Sunday dinner and LOVED it. Man, I will be smelling like garlic for three days, but oh, it was worth it. So good. Thank you for posting the recipe. I will be making this again. :smile:

Wonderful recepy
I made it with my homemade pastasauce (maybe ill post the recepy for it sometime) and italian dry sausage i forgot the name of, and using fettuci pasta.
Result was awesome, thoroughly enjoyable, the grilled garlic is much smoother then just sauteed garlic so it doesnt really get too much.
I did put in slightly too much of the sausage making it a bit overly filling and 'dry' but that was my mistake and didnt make it less enjoyable really :smile:
