A Sushi Session With Stonesun (Pictorial). * 6

Here's my new pictorial from a few days ago how to roll sushi.
There are a lot of people around who don't like raw fish,
but it's OK, you can be still a fan.
The word "Sushi" means seasoned rice, so
basically you can fill the rolls with anything you want.
The only raw fish used in this session is ahi tuna.
Besides that I have used crab meat, softshell crabs, eel (cooked) and tempura shrimp.
Rolling sushi requires patience,
but the really time-consuming part of the procedure is the preparation.

Lets get started!

The single most important part of sushi is the rice.
Gotta be japanese rice, a short grain and sticky kinda rice.
It has to be rinsed out a few times before the cooking.
The easiest way to cook it obviously is in a rice cooker:


After cooking you have to season it with a mixture of rice-vinegar, salt, sugar and sake. It's called Su. You have to "cut" the
rice for about ten minutes, to evenly distribute the seasoning, then you have to fan cool it to room temperature:


In the meantime I like to prepare my vegetables used in the rolls, and garnishing.
These veggies include daikon (a japanese radish), seedless cucumber, carrot and avocado.


I peel everything, and curl up the daikon and carrot for garnishing.






Here's the garnishing:


Cut the avocado and cucumber:






After I finished with the veggies,
move on with the crab meat. Most sushi places would use imitation crab meat to
their California rolls, but both my wife and
I hate it, so we always go with real crab meat. Rinse it, mix it with a touch of mayo,
and it's good to go!




The next step is the spicy tuna.
Cut the tuna in several pieces, and chop it up. Leave it still a little bit on the
chunky side. Mix in a little (I like a lot) of Sriracha hot sauce and
tobiko (flying fish roe), and it's done:








Now we prepare the shrimp, and the softshell crabs to fry.
Remove the head of the shrimp (you can buy headless shrimp, of course, but I like to use the fried shrimp head as decoration...)
cut them on the bottom, and push them thru
your fingers to make them long.




Make some tempura batter mix from
flour, cornstarch, egg and soda water.
Coat the shrimp and softshell crabs
with it, and into the fryer they go!




You done frying, all you got to do is to
cut up your eel in stripes, and you're ready
to roll some sushi!


Here's all the prepared food:






California roll, is an inside out roll (it
means that the rice is on the outside of the roll)
and is made with crab meat, cucumber and avocado.
You take a sheet of seaweed (nori) and place it on your plastic wrapped rolling mat.
It is wrapped to prevent the rice to stick to it.
Put your seaweed shiny side down, and apply
a good amount of rice on it evenly.




Sprinkle it with some toasted sesame seeds.


Then flip it up side down on the mat,
and put two slice of avocado on the bottom
of the sheet. You always start with the avocado, because it sticks to the seaweed.
If you do it othewise, your avocado will
slide on the crabmeat.


You now can put the desired amount of crab
meat on it.


And finish it up with a couple of slices
of cucumber.


You roll it up with the help of your mat
towards to the top part of your seaweed sheet,
leaving a little gap.


Turn the roll a little bit, and finish it up
squeezing the roll firmly and tapping the
ends.
Your roll should look like this.


I like to prepare all my rolls first, and then cut them
into pieces, but you can always roll, and cut too, it's just a matter of preference.

Next is a Spider roll, inside out (at
least I make it) as well.
It has spicy mayo, fried softshell crab
and avocado in it.(Can add cucumber too)
Procedure is pretty much the same like with the
California roll, but start with the spicy mayo.


Then the crab and the avocado.






Roll the same though...

Next we have spicy tuna and eel rolls.
I like to roll them the traditional way,
seaweed on the outside.
I turn the sheet sideways, and shiny side down as well.
Evenly distribute the rice on the whole
sheet, except an inch at the top.

Spicy tuna:


Eel:


Wet the blank end of the seaweed, and finish
rolling it up with the bamboo mat.


As for the last roll, I was making tempura shrimp roll, same way as above, but inside out as the Cali roll.



I've made several of each rolls, and then
cut them up, and arrange 'em on a wooden sushi-boat, and a couple of plates.


And here we are, the final product!

No, I just used to manage a steakhouse
with a sushi bar.
My good friend (the owner) who is actually a white american guy
learned sushi in Japan a decade ago,
and passed his knowledge to me.
Pretty awesome from him:thumbup:

I've also spent some time making cooking pictorals in this forum, just because it's more appealing for people to see.



I wish more posters like us came back, Soochi, Geokills, Ganja, etc....

I just had all you can eat sushi 2 days ago, and all I can think of now is having more.  Thanks a lot stonesun.

Really though, awesome.  I'm gonna have to get into this.  You just get your fish at the supermarket?  Are there any safety concerns with that?

Worms are not a concern in farm raised imported sushi grade fish.
I just buy my fish on the fresh market,
they have very high quality tuna, salmon and
yellowtail.
The rest of the ingredients come from my local asian market.

I think the most common way with wild caught
fish to kill worms is to freeze it under -4F
for a few days, IIRC...

Yepp, pretty much.
I love sushi, and instead of sake or wine
I much more prefer a good beer with it.
I found that a lightly hopped Saison, wheatbeer or Kolsch is the best choice
with sushi. :2cents:
