A Sushi Session With Stonesun (Pictorial). 6

Here's my new pictorial from a few days ago how to roll sushi. There are a lot of people around who don't like raw fish, but it's OK, you can be still a fan. The word "Sushi" means seasoned rice, so basically you can fill the rolls with anything you want. The only raw fish used in this session is ahi tuna. Besides that I have used crab meat, softshell crabs, eel (cooked) and tempura shrimp. Rolling sushi requires patience, but the really time-consuming part of the procedure is the preparation.
Lets get started!
The single most important part of sushi is the rice. Gotta be japanese rice, a short grain and sticky kinda rice. It has to be rinsed out a few times before the cooking. The easiest way to cook it obviously is in a rice cooker:

After cooking you have to season it with a mixture of rice-vinegar, salt, sugar and sake. It's called Su. You have to "cut" the rice for about ten minutes, to evenly distribute the seasoning, then you have to fan cool it to room temperature:

In the meantime I like to prepare my vegetables used in the rolls, and garnishing. These veggies include daikon (a japanese radish), seedless cucumber, carrot and avocado.

I peel everything, and curl up the daikon and carrot for garnishing.



Here's the garnishing:

Cut the avocado and cucumber:



After I finished with the veggies, move on with the crab meat. Most sushi places would use imitation crab meat to their California rolls, but both my wife and I hate it, so we always go with real crab meat. Rinse it, mix it with a touch of mayo, and it's good to go!


The next step is the spicy tuna. Cut the tuna in several pieces, and chop it up. Leave it still a little bit on the chunky side. Mix in a little (I like a lot) of Sriracha hot sauce and tobiko (flying fish roe), and it's done:




Now we prepare the shrimp, and the softshell crabs to fry. Remove the head of the shrimp (you can buy headless shrimp, of course, but I like to use the fried shrimp head as decoration...) cut them on the bottom, and push them thru your fingers to make them long.


Make some tempura batter mix from flour, cornstarch, egg and soda water. Coat the shrimp and softshell crabs with it, and into the fryer they go!


You done frying, all you got to do is to cut up your eel in stripes, and you're ready to roll some sushi!

Here's all the prepared food:



California roll, is an inside out roll (it means that the rice is on the outside of the roll) and is made with crab meat, cucumber and avocado. You take a sheet of seaweed (nori) and place it on your plastic wrapped rolling mat. It is wrapped to prevent the rice to stick to it. Put your seaweed shiny side down, and apply a good amount of rice on it evenly.


Sprinkle it with some toasted sesame seeds.

Then flip it up side down on the mat, and put two slice of avocado on the bottom of the sheet. You always start with the avocado, because it sticks to the seaweed. If you do it othewise, your avocado will slide on the crabmeat.

You now can put the desired amount of crab meat on it.

And finish it up with a couple of slices of cucumber.

You roll it up with the help of your mat towards to the top part of your seaweed sheet, leaving a little gap.

Turn the roll a little bit, and finish it up squeezing the roll firmly and tapping the ends. Your roll should look like this.

I like to prepare all my rolls first, and then cut them into pieces, but you can always roll, and cut too, it's just a matter of preference.
Next is a Spider roll, inside out (at least I make it) as well. It has spicy mayo, fried softshell crab and avocado in it.(Can add cucumber too) Procedure is pretty much the same like with the California roll, but start with the spicy mayo.

Then the crab and the avocado.



Roll the same though...
Next we have spicy tuna and eel rolls. I like to roll them the traditional way, seaweed on the outside. I turn the sheet sideways, and shiny side down as well. Evenly distribute the rice on the whole sheet, except an inch at the top.

Wet the blank end of the seaweed, and finish rolling it up with the bamboo mat.

As for the last roll, I was making tempura shrimp roll, same way as above, but inside out as the Cali roll.

I've made several of each rolls, and then cut them up, and arrange 'em on a wooden sushi-boat, and a couple of plates.

And here we are, the final product!

No, I just used to manage a steakhouse with a sushi bar. My good friend (the owner) who is actually a white american guy learned sushi in Japan a decade ago, and passed his knowledge to me. Pretty awesome from him

I've also spent some time making cooking pictorals in this forum, just because it's more appealing for people to see.

I just had all you can eat sushi 2 days ago, and all I can think of now is having more. Thanks a lot stonesun.
Really though, awesome. I'm gonna have to get into this. You just get your fish at the supermarket? Are there any safety concerns with that?

Worms are not a concern in farm raised imported sushi grade fish. I just buy my fish on the fresh market, they have very high quality tuna, salmon and yellowtail. The rest of the ingredients come from my local asian market.

Yepp, pretty much. I love sushi, and instead of sake or wine I much more prefer a good beer with it. I found that a lightly hopped Saison, wheatbeer or Kolsch is the best choice with sushi.

Definitely gonna try this tomorrow... got the day off work so i can prepare everything. My girlfriend will freak. shes 1/4 japanese and we've tried making sushi a few times and it never quite worked out. She actually makes some pretty good japanese food tho. Maybe i'll get her to put her oganu miaki* (sp) tek up her with some pics. thanks for the post... can't wait to eat some sushi

i haven't gotten around to making sushi yet, partially because i'm lazy and partially because i can't find the right rice at stores around here. should it say "sushi rice" on it or something? lol. i found a ton of white rices at the world market in columbus but i didn't know which one to get. got any recommendations?

Yes, most of the general brands will say "sushi rice" or "japanese rice" on them. I usually buy it at the asian market, but my local supermarket carries it too. I prefer the market rice, because it's cheaper, they sell it by the pound and somewhat better quality. The supermarket one is alright too and the brand is Nishiki.

WOW! I am super impressed! He knows how to brew and make sushi!
I used to roll sushi for a period of 8 or 9 months a few years back. For somebody who has never worked at the bar, you've got a very good handle on this stuff. Not many people know the sake in the sushi seasoning bit. It makes ALL the difference. Very nice presentation too!
I'm actually working up a menu for a sushi night here in a few. I've just moved to this area, and I'm having trouble locating certain ingredients though. It should turn out alright.

I am genuinely jealous, I REALLY REALLY want to try this and dont really know where to start buying all the supplies, the actual sushi making set, I know where to get all the food. BTW, I am putting the Alacabenzi sporeprint to good use and will soon be giving back to the community.

Here is some sushi I made not to long ago:

It contains hamachi, sake (salmon), yam and shrimp tempura and a large plate of chicken katsu I made with tempura batter and a panko bread crumb coating. Sushi is a regular part of my diet and I tend to make a batch of rice in the morning before I had to school so I can make a couple rolls by lunchtime.
The cool thing about living in a beach community is that fresh fish is always on hand. And if you're into it, fishing for it yourself is even better. The asians go crazy over the spanish mackeral we catch around here.

For every cup of UNCOOKED rice (which yields about two cups of COOKED rice) I use about:
- 3 tbsp rice wine vinegar - 2 tbsp sugar - 1 tsp kosher salt - 1/2 tsp sake
Dissolve the sugar and salt in the warm vinegar add sake and let it cool to room temperature. While you fanning it, mix this mixture in the hot rice using a cutting and folding motion to avoid crushing. You gotta do this until your rice is room temperature.

i need to get me a rice cooker, i've wanted one for years. i made sushi for my first time last weekend and i loved doing it. everything turned out amazing, but it was all pretty basic. the point is that it is awesome making your own and i would definitely love to do it more often if i could.

Hey man, thanks for posting this. It inspired me to give it a go. I think I may lower the amount of vinegar I use in my rice to around 1-2tsp per uncooked cup, as opposed to three. I just made some shrimp tempera rolls, California rolls and some spicy shrimp rolls (Poached shrimp with spicy mayo). I need to work on my rolling!

Awesome man! Aren't you glad you've tried it? Nothing beats the fruit of your hard labor! It will take a couple of more times to get the rolling part to perfection, but it's really not that hard. Just firmly push the mat down on the bottom, and them push in the two ends too. Of course you'll need a razor sharp well wetted knife too to cut the roll easy and mess free. Good job
Ps: don't you fuckin' hate the clean up part?

I'm definitely glad I tried it - I'm going to do it again sometime soon. It tastes so much better when you put the work in. A sharp knife would have been clutch. I screwed up a lot of my rolls trying to cut them - the nori doesn't cut easy with a dull knife. Going to pick one up next time for sure. Yea, the clean up is a bitch but luckily it was my brothers turn to do the dishes.
My next project in brewing. Going to do an extract of American Wheat.

I can't honestly recall where we got that particular salmon... but knowing that we baked the roll, I would imagine we were not absolutely assured of its integrity! 
These days, if I'm going for sushi grade raw fish, I'll usually pick up my pieces from the Fish King in Glendale or from the Mitsuwa Japanese market in Torrence.
The cream cheese in those rolls was almost over the top. The level of fattiness oozing out of those suckers was almost incapacitating, but totally awesome.

Lol, 30 minutes is not bad at all for fresh fish. And even if you don't have raw fish you'll be able to make a vast array of different rolls. I get my shrimp, crabmeat, softshell crabs and sometimes even the tuna (usually just for the spicy tuna) in my local grocery store.
@ geokills: That sure looks like a yummy roll my friend! I'm on vacation, but when I get back home, I'm going to make a tutorial on how to cut different fish for sashimi and nigiri.

Ive decided Im going to make some salmon and shrimp nigiri with natto makizushi rolls this week. Ive been craving sushi all week. Had some really good stuff out in Japan town in Frisco last month.

Kiss seafood? I went there once and the man had the best salmon Ive ever had in my life. I mean it was leaps and bounds beyond any other salmon Ive tried.

Yum! That sushi looks really good! I think I should try and make some more. I tried a few times before, but it didnt turn out that great. I really want to get some raw fish from the fish markets.

Excellent pictorial, I really enjoyed the pictures and detailed instructions. It's so foreign to me, and seems fairly difficult ... i'm not sure if i'd try this at home or not.
To be honest, those pictures put my favorite local sushi place to shame!
