I'm interested to know how this turns out. I made a batch of habanero mead back around Christmas time, and, while it gives a whole new meaning to the term "fire water" it definitely needs time to age. I've put a minimum of early May on it, but it may take longer than that.

Nothing's wrong...the wine is still sitting in the carboy...waiting :wink:

Likely will take 2-3 more times racking it before it falls clear.

Day 28: I gave up on waiting, and decided to go ahead and bottle it tonight (it was already clear)!

It tastes quite good! The heat level is not unbearable, even by my gf who doesn't like very hot foods. Starts off with a pepper taste, which is quickly overcome by a rising heat level. It's a strange heat, though, quite unlike anything I've tried! The heat builds rather quickly just to the point of being painful and then drops off just as quickly, leaving a gentle warm sensation in my mouth and throat.

We are going to make a stir fry tonight with the wine added to it...more on that later.

I actually expected it to turn out a lot hotter than it did! It is very drinkable!

And it turns out to be a great cooking wine! Added about 1/3 cup to our stir fry tonight. The heat was just noticeable, which is where I like it in a stir fry. My gf claims she will use no other, now that she has this wine for cooking with!
