Shiitakes...Fruiting in the bag??!!

I ordered shiitake sawdust spawn for the farm I work at, the date says 2-13, and it arrived with PINS EVERYWHERE!  I re-ordered from another company at my own expense, and kept this bag for myself to fruit and clone.  How often does this happen?  There's little to no browning, but pins everywhere!  This is something I've never heard of, can anyone inform me about this?  Are those even pins? I have not studied shiitakes much.  Is it a strain worth keeping?

RR was writing about cold shocking his shitake immed after full colonization and getting fruit before the block turns brown.  Perhaps your bag was just at this point when it got the cold shock while shipping.

IMO people too often ascribe weird behaviours to a strain and not cultural conditions, but I could be wrong.

It is probably worth culturing it to find out.

I see no pins in you're bag. Just popcorning. Pins are dark brown spots on those formations. To get shiitake to form pins in the bags I keep the bags in complete darkness until JUST almost colonized. Then stick the bag somewhere where there is plenty of good light. With most strains I believe, except for the very low temp strains,  most of the time the pins will form inside the bag during this period without a cold shock. Sporeworks shiitake for example will do this at between 65 and 70 degrees.  When this happens take the block out of the bag and put it into you're fruiting chamber, mist the block slightly, and drape a piece of wax paper over the block until the pins start to extend outward about a quarter inch"high humidity at this point". Then remove the paper and watch them get bigger. Sometimes a few more pins will form under the wax paper.

It is possible that pins could form in that bag on those formations but you might be to far along. That bag was probably fully colonized 2 weeks after it's inoculation date there.

cool, what I'll probably do is clone one of the bigger 'popcorns' since I'm cooking agar tonight, and attempt to fruit the block the best I can.  This is a warm weather strain from mushroomharvest

Popcorning, some call it blistering, is the block attempting to fruit. If you don't give it enough good light,  the pins won't form and the block will just start browning. There is a time period from the point right before blistering and the point it starts to blister heavily where you need to pay close attention to you're block. As soon as that block starts to fully colonize get it into the light so the pins will form. After they form it's not so hard to keep them going with good humidity.  I still would cold shock the block but IMO I think the blocks should be exposed to light during the cold shock to maximize it's fruiting potential.

I will try to snap some shots when I get back from my hunting trip up north next week. Good luck and don't get depressed if you're blocks don't fruit when they are white the first time around. It takes a little practice until you get it down with a particular strain. Once you got it down you're set. Don't forget to take notes. Oh! and one more thing. Don't over supplement. Sometimes this holds back fruiting. I actually don't supplement my bags. I just include enough spawn to get the job done. I use 5 cups,dry volume, of alder or oak pellets inoculated with 1/2 to 3/4 of a quart of spawn in each bag for my shiitake grows. I use pasteurized sawdust.

Leave them in the bag.  Blistering is only the first stage.  Wait until they brown, and then remove from the bag and set on a shelf for a week or two to let the block dry out and form a crust.  Don't mist during this time.  Then, give it a few days of cool temps around 50F, and then a 24 hour soak in cold, but not icy water.  After the cold soak, place in fruiting conditions.  The above should give you the best flushes.

Yes. The flushes on white blocks will not be as good as browned blocks as described by RR although I have seen some pretty good flushes of some white blocks before from professional pics. I have yet to get a very good flush with a white block yet. I need more practice.
