How long is too long before birthing??? .:&:. Premature pinning...

So the jar reached 100% colonization on 10/21, at which time I started the 1 week birthing countdown; but now I notice a little mini-shroom growing inside the jar.
1) Should I forgo the week waiting period and birth now?
 
And...
2) Are there any negative side effects to waiting longer than a week before birthing? (I have one jar that has been at 100% for like 10 days, but I haven't had time to birth it yet)

Also, how much light is required to initiate pinning?
The jars have been in the dark 99% of the time; they only receive light for a minute or so every few days when I check their progress... And if so, is there an equivalent to the green lightbulb for mushies?

light on its own is not a pinning trigger. you can colinise in the presence of light without any effects. i would birth the jar thas pinning.

Whaddabout the ones that just have the knots, or whatever they're called; like little 1.5x3mm stem colored things... Birth them too?
Also, you start counting off the week (to birth) from when the bottom is 100% colonized, right? If they start pinning on their own before you're even a few days into that week, does that mean that the myc just happened to colonize the inside of the cake at the same time as it was colonizing the outside?
It seems that my cakes have been shrinking in the jars and the dry verm layer has been falling down into the gap between cake and glass, which makes it look like it's not colonized at the top... Should that problem go away when I switch to widemouth 1/2pints (I am using reg mouth now)?

i have 2 jars that had the dry verm on top fall along the sides. if your jars are pinning i would birth them. there trying to tell you its time.
