Commercial Oyster viable in southeast? How to make sells?

So does anyone know much about the south east US as far as oyster price to restaurants? Is it still viable or has there been a large commercial operation to take over the area?

Also how the heck would you sell oysters to a chef?? I mean a strange man coming in with mushrooms "for sell" would weird me out if I was a chef.. how do you sell them?

Can you sell them like that? or are there FDA or other permits required?

You will have to look into your state regulations but there are no FDA regs to worry about.

In my experience chefs have been very pleased to have someone come to them with such a product.

Especially oysters, but this goes for all mushrooms too; chefs are very happy to find a source that can deliver superior freshness. It is very hard to get fresh oyster mushrooms unless you have a source that is close to you and can deliver them quickly after harvest.
