I found whisking the flour in gravy works well to reduce lumps.

Might also help in this recipe.

You need a pretty big whisk though.

If you have a relatively fine sifter, you can use that too, but the whisk is an awesome way to incorporate flour.

A porter might be interesting, but I think it wouldnt fit very well. Maybe like a really sweet stout or porter, but the Sierra Nevada Celebration Ale worked marvelously. Maybe some stone ipa would work also.

Black butte porter worked very well! The soup was really good. I added rosemary, sage and garlic towards the end of the saute part.

Any beer will work.

I like a happy beer like IPA, but I've also found a simple can of shitty beer like PBR works pretty well too.

Dark beers do work well.

If you like dark beers - try my St. Patty's day fondue.

Gruyere or any other swiss-style cheese would work well with mellow porters and stouts.

It turned out to be very tasty :laugh:
I think any medium-sharp cheese will do fine in this soup and that a little bit of garlic would be a nice complementing additive too :thumbup:

I added a little garlic to it. Not fresh but just a dash of powder. I little added a lot!

I made my beer-cheese soup yesterday. It turned out great. I couldn't get online though, so I had to do a lot of guesswork and making shit up as I went. It all worked out.

I'm gonna eat the leftovers later. mmmmmm

when i coat the cheese in flour, do i pour in the excess flour as well as the cheese, or just the cheese?

if there are any chunks of flour take them out - otherwise you won't have left over flour

Tonight I added a pound of chopped broccoli, 12 oz total of sharp white cheddar and pepper jack, and 1/2 a bottle of Great Lakes Oktoberfest. 

I was expecting more of a cheddar flavor, but the pepper jack gave it a nice warmth.
