1st grow birthing w pics

Hi Guys, Ive been reading on here for a while now and started my first grow about three weeks ago.
Using the BRF cake method, I made my own syringe from a print that I ordered off the internet and inoculated five sterile jars. All of the jars were fully colonized within two and a half weeks.
I birthed two of the jars that appeared to have colonized the quickest about five days ago and have left the remaining three in my incubation chamber for now to ensure that the cakes have colonized all the way through to the center of the jars.
My fruiting chamber is just a bucket that I wiped clean with rubbing alcohol. I placed unsterilized damp perlite about 2" deep and after dunking and rolling put the first two cakes on two small circles of tin foil onto the perlite layer.
I have just used a clear plastic bag over the top of the bucket and I am currently removing the bag two to three times a day and fanning for FAE and then spraying the cakes lightly with a spray bottle.
There is still no sign of contamination on either of the cakes and they have started to develop tiny (2-3 mm) needle like pins all over the cakes.

Sorry for the poor picture quality from my web cam.
Do any of you more experienced growers have any advice that will speed up / improve my results?
The cakes are not showing any pins with caps at all - should I be starting to worry?
How much longer will it be before I should have fully grown mushrooms?

You did dunk and roll in vermiculite, right? and what is all that at the bottom of the tub? it looks like vermiculite, but there is no point in having that stuff at the bottom of the tub. all you need is purlite at the bottom to raise humidity. put aluminum foil on top of that, and then put the cakes on the aluminum foil.

It looks like perlite to me and it also looks like he has rolled them in verm
