Rare Pan Seared Tuna!

Sushi Grade Tuna
Black Sesame Seeds
White Sesame Seeds
Olive Oil
Wasabi
Soy Sauce

Cut the Sushi into nice sized strips.

Mix the Sesame Seeds up in a bowl and pack the seeds onto the strips of tuna.

Heat the Olive Oil really freaking hot.

Mix the Wasabi and Soy Sauce.

Cook the fish for a few seconds on each side. 25 seconds at the most. You want it to be rare on the inside for the best flavor.

Pour the Wasabi onto a plate and lay the fish on it.

Enjoy.

Southern Style Cajun Bad Ass Catfish

Catfish Filet
Bread Crumbs
Cajun Seasoning
Flour
Oil

Mix Equal parts Bread Crumbs, Flour, and Cajun Seasoning.

Lay catfish in it. Get it coated real well.

Cook fish in oil till flaky white inside.

Enjoy.

Heres one of the best recipes I know...

Greek Cod (for 4)

12-15 sun dried tomatoes
good bunch of fresh basil leaves (maybe two handfulls)
4 cloves garlic
2 or 3 cups of water
olive oil
4 cod fillets
1 lemon
half kilo new potatoes (or small ones, like salad potatoes)
2 red onions
1/2 tin black olives

boil the potatoes for 10 minutes, or until not completely cooked but well on the way

put the tomatoes and basil and garlic and water in a blender and puree

slice the onions (dont chop) and arrange them with the potatoes (halved or, if bigger, cut into smaller pieces) in a cassarole dish or oven dish

pour the tomato/basil puree over the taters/onions and add more water if its not covering them

cook for about 20 minutes in oven at 200 celcius

take out, put a layer of olives (hlaved) on top

arrange the cod fillets over the top, and put a slice of lemon on top of each fillet, squeeze the rest of the lemon over the dish

cook for another 8 or so minute until the cod is cooked

THIS IS FUCKING AWESOME, AND WILL GET YOU SEX
