I made a 4-egg-scramble with some baby spinach, red peppers, red onions, jack cheese, honey ham, and heirloom tomato, FTW!

Me too.  My favorite way to prepare em is over-easy though. I was just in the mood for a scramble.  Oh, and I'm whipping up the eggs before pouring em into the pan I also added a fair bit of Cholula brand hot sauce and cracked black pepper.

I always fuck my eggs up when I try and add tomato's, they end up being too watery. How do you prepare them?

I don't throw the tomatoes in until very late. I throw onions + peppers in to the pan and let them simmer in a little butter. When the onions start browning a little I pour the egg mixture (4 eggs, diced baby spinach leaves, black pepper, cholula, the tiniest dash of 2% milk) over the peppers and onions. I add the ham on a little after that, then tomatoes once the eggs seemed to be shaping up and getting cooked, and I add the cheese at the very end. Maybe let the cheese sit for about 30 seconds with all the eggs then I take it all out. W/7 grain toast on the side, of course.

I cant fry an egg to save my life.  failed this morning and got too pissed off after 2 attempts to try again so I just went hungry lol

This is without a doubt, you're best post, EVER.
Eggs are the shit. I can't get enough of em.

I'm frying some up right now, NO SHIT* in olive oil, with plenty of spices.
And mushrooms. (Even chili spices, it's fucking awesome)

*Low temp, so I can :typing::sheesha::bigweed:

Also mixing a bunch of ingredients with eggs, and throwing it all in a corning ware dish to bake in the toaster oven on low heat. Oh so good, so soft, so amazing.

I like it a little runny. Because it cooks up soft and moist.
Try it if you've never done it. It's fucking awesome IMHO.

Uhh, cook it longer then when it's in a runny state. I don't know.:smirk:
But I've gotta say, I'm a huge fan of baking egg mixtures, as I edited to include above.
But hey I love soft boiled, poached, fried(light, or hard) baked, enema, you name it.

Break the yoke open after you crack your egg in the pan. The yoke will mix in with the white and you'll get just a flat egg with no runniness.

Also helps to flip it once. :super:

I do this all the time at my crepe shop.

ill try breaking the yold, flipping, and cooking longer then.  No matter what a put on the pan it always seems to just rip apart when I try to flip it

Haha yeah dont try to flip more than one egg at once (if they got cooked together), unless you have a rather large spatula. Separate 'em, wait till the edges are looking kinda brown/crispy, and flip. Usually only takes 30 seconds or so after you flip, other wise you burn 'em.
