some Agrocybe aegerita (black poplar) pin porn... what to do about fat stems small caps?

first the pics, then the info and questions...
 i ran out of spawn bags, so i put the rest of the substrate into jars... should have used my wide mouth pinters, oops...

 That's the whole layout, now my attempt at being arty...




This is my first time with these guys. Picked a few out of one of the jars the other day because veils were breaking already... Didn't dunk the jars, but i dunked the cakes, i think to dunk the jars after this flush i will submerge them in my PC, then just flip them upside down for a few days to drain. LC syringes from sporeworks, to rye grain, fruiting sub is bran supplemented alder wood chips and sawdust with gypsum. Lots of pins, and it looks like its setting up for an even better second flush They're growing really fat with little caps, anybody know whats up with this? only problem i'm having with my FC right now is temp too high for these mush, besides that i have good humidity and plenty of FAE... would high temp cause this?

Looks perfect to me. I think the fat stems are strain dependent. Nothing to worry about.

Stamets describes the smell of A. aegerita mycelium as, "Farinaceous, not pleasant." What the heck does that mean? How would you describe the smell?

i think it smells fine. It does smell pretty strong though. I opened each one of the jars and stuck my nose right in it like i do with oysters and took a big wiff and it smelled pretty intense. It's interesting how the skin turns all brown, kind of like shiitake, but not all hard. I've only picked out 2 that had their veils breaking already from one of the jugs. They taste delicious.
i looked up farinaceous. Most definitions were something along the lines of "composed of or covered with particles resembling meal in texture or consistency" or "Made from or resembling Starch". I don't know if this describes the smell so well, but i would definitely say the skin is pretty farinaceous... look at my second to last picture, you'll see what i mean.
