Are temperatures forgiving?  I have a thermometer in a little bin in my basement, I'll check it tomorrow morning but I don't think it's as cold as 65º.  I might not be able to get it that cold, except for a fridge that'll keep it at what, 45-50º?  Is that too cold?

dont put it in the fridge, yeah too cool :lol:

doesnt have to be 65, look up the fermentation temperature for your yeast.

if u type the name of the yeast your using into google, u can find out its actual latin name, and find what temps it does best at, and what temps would be detrimental to the taste.

Well the Premier Cuvee says 45-95º, my basement probably averages about 73.  That just seems too warm..:shrug:  Once it's fermented, it's cool to refrigerate, right?  I mean I wouldn't be letting it sit in there for more than 24 hours, just enough to get it nice and cold.

after fermentation its fine to put it in the fridge, this will actually cause the remaining yeast to go dormant and fall to the bottom, clearing out your brew. clear brew is what a lot of people like :smile:
i personally like it a little cloudy, but its all about preference.

and if your brew turns out pretty good, try it over ice :thumbup:
iced cider is bomb!

Nice...that's what I was hoping for.  I'll definitely have to try that.  Apple cider is just so much better than apple juice.  It's so much thicker and has such a richer taste.  I can only imagine how good that is with some bite to it.  :drooling: :toast:

Would it be fine to try the Alcotec 48 hr. turbo yeast with cider?

It says on the package also not to use an airlock. Whats up with that?

My yeast and potassium sorbate came today!  :grin:  I can't wait to get started!  Should I let the juice temper in my basement before adding the yeast?  I know some of the bottled juices are already room temperature at the store but the cider is kept refigerated and it's in a different kind of container, just like this. 

(Actually this is the brand I get)

knowing myself i would probably let it sit til its room temps before adding the yeast.

is that juice good on its own? you would drink it as it is?
if so it will probably turn out really well.

good luck sir, keep us updated, and have fun!! try not to poke at your brew too much, i have trouble staying away from my brew lol

Oh yeah, it's delicious.  It's so thick and flavorful...I can see it being an awesome brew.  I've been known to drink a whole gallon of it over the course of a night so I have to watch it when it's 20% :lol:

Anyway I have some last minute questions before I start.



1.)  The back of the yeast packet says to mix with water first, but it doesn't look like you do it in your tek.   
      Is it necessary?

2.)  You say you make (1) 5 gal. packet last 8 gal.  Do you have a rough estimate on how much to add   
      per gallon?  Does how much you add affect how fast it will need sugar, or how fast it's done?  I'm
      thinking of just opening the pack, dumping it on a plate, and separating it into 5 equal piles... 

3.)  Do you mix it at all or does that agitate it?  Like every time you add sugar do you let it just fall in and 
      let the yeast eat it?

4.)  How big of a pin/hole(s) do I make in the reservoir tip?  :grin:  I'm thinking like, largest sewing needle in   
      the box? (not a yarn needle :tongue2:)

5.)  I still don't have a clear answer on this.  The type of jug I'm using doesn't have a wide spout like the 
      regular harder plastic juice bottles.  Will the condom stay on there?  Does it create enough pressure
      to blow it off?  I just don't want to worry about waking up to a lidless, contaminated brew.


I haven't had so many questions on something since I was in to cultivation.  :regularshroom:

No its not necessary,
it just helps get the yeast going so when u pour it in its ready to munch away. if your doing big batches where u would need the entire packet, you might need to do this, but im talking 5+gallons.

You can also use this tek to innoc multiple batches from a small amount, as yeast multiplies quickly.
You could pour some of your apple juice into a glass jar, add a little yeast, cover it with syran wrap and poke a few holes in it, and leave that in your cupboard for a few hours to get going, then use the liquid to innoc multiple batches of brew with less yeast.

how much u add effects how quickly the brew starts to "ferment"

yeast multiplies quickly, say u put half a teaspoon in the brew and maybe introduce 100,000 yeasties, in an hour or two it might be 400,000
now say u put a full teaspoon and maybe introduce 200,000 yeasties, and in an hour or two its 800,000 yeasties
they would continue to multiply into amazingly large numbers too...

i sometimes give the bottle a little agitation after i add the yeast, so it doesnt stick to the walls of the bottle above the juice line, but its not needed.

when i add sugar, i usually let it just fall to the bottom and let the yeast do its thing, as bayanus (cuvee) is mostly a bottom feeder
sometimes if a brew is nearing the end, i will sort of move the bottle in a manner that stirs the contents, just to help it along its final leg of the journey, this probably isnt needed tho
when u add sugar it gets real foamy, if i were to stir it afterwards it would probably overflow

up to you, it just needs enough room for air to escape. if its a super thin needle, at least have 2 holes by poking the needle clear through the nipple of the condom.
personally i like to use the thickest needle (i use a tapestry needle), and poke it clear through leaving two holes

if u have holes poked in the condom for air to escape, it shouldnt blow off. just keep an eye on it for the first day to make sure its not inflating the condom, ive forgotten to poke holes overnight and had a balloon the next morning, but not an uncovered brew.

as long as u take off that pokey plastic ring that stays on under the cap so it doesnt tear the condom, and the mouth of the jug has a "lip" farther down for the condom-ring to go around, it should be fine.

Damn, the Ziegler's apple cider has potassium sorbate in it.  I guess it won't work, since it prevents further fermentation?  :frown:  I should have read the jug at the store.  The other juices I got are fine though.

Okay when I did them I forgot they were 1/2 gal. bottles and I used a lot of yeast.  The condoms were inflated within 6 hours.  I didn't have a thick sewing needle so I used a small computer/watch phillips head screwdriver to poke the 2 holes in the tip.  I looked this morning and they're still inflated but they're saggy.  I'm going to wait until after work and see if they're still saggy or not.  If they are, should I replace the condoms and maybe use the pin instead?

Well I popped the condoms off of 2 bottles and replaced them with ones and used the pin to make holes.  They blew right back up.  I found bugs in one of the bottles of lighter juice, which makes me worry about the dark juices I can't see into.  One of them has a LOT of big chunks in it, I'm assuming that's yeast?  I'm definitely going to want to filter that stuff out before drinking!  On a positive note, when I removed the condoms on some of them it smelled like wine!  I expected mold or something like that but I can see this being pretty tasty.
