You're thinking of vermiculite. The little bit of airborne bacteria from sucking in .5L of air is negligible.
What he really needs are some campden tablets.

vermiculite? why would i be thinking of that? wine making has no use for vermiculite.......?
sulfites are not good for you, which is why many home brewers dont use them. ive never used them and ive never had a problem.
edit: oh i see what youre saying now, but i have no idea how you connected vermiculite as a barrier in mushroom cultivation and co2 as a barrier in winemaking...? co2 has been the primary protective barrier in winemaking for thousands of years, and it still is today, and wineries of today even go a step further, after adding sulfites to stop fermentation(yuck), they purge all oxygen with a blast of co2 right before corking.

The aeration is to help the yeast reproduce. Since he's using a whole packet of yeast for 1 liter of wine it may be unnecessary.
If he were using 2 packs to 5 gallons, he would probably want to aerate with a bubble stone.

unnecessary. ive never aerated and i do 2 tablespoons of yeast to a 5 gallon jug. show me where you read that oxygenation is used in wine making. ive never read that, and i was just at a winery this past week as a matter of fact and they do not aerate either. oxygen is not needed, whether or not it might be beneficial is another story, but IMO its an unnecessary step that just invites contamination for a novice, or even somewhat experienced fermenters. co2 protects the wine and co2 pressure buildup prevents anything from entering the container.

it seems that they can be aerobic or anerobic. which suggests that oxygen would be beneficial, however it isnt necessary. i know this from personal experience. so i guess were both right on that one. it can be used, but i still highly advise it NOT be used by a novice.

you can use honey, but it adds a flavor that i do not like to wine. if youre going to use honey, you should make mead.

hmm seems like alot of unnecessary steps for making wine, but i guess if it works, it works. let me know how this turns out. ive never distilled wine before, then again im no fan of brandy. ill stick to good old fashioned wine.

I have only made wine twice--the first time it worked the second time it didn't... because oxygen got to it. I brew beer and I aerate once--before the yeast is added. If you mix all that grape juice, sugar and water in the jug, it should be oxygenated enough to carry your yeast through fermentation. If you're worried about needing more oxygen, shake it once or twice THEN add the yeast. It's only a gallon-or a liter in BH's case. To much oxygen will give it nasty flavors and possibly stop fermentation. Never oxygenate after yeast is actively fermenting. If you are brewing wine only to distill it, it is okay to have off flavors, as distilling wine strips most flavors off anyway if you distill properly.

well that recipe is unlike any ive ever seen for regular wine..... so who knows how it will be undistilled. either way, post the results.

ahhhh. that makes sense then. because ive never heard of anyone aerating wine. makes sense for brandy though.

what Ive always heard is you can shake/aerate the first 3 days or so to get them going good. then after that its bad to introduce O2. apparently alto of people leave just a cloth over the top of the vessel the first few days, aka they don't use the fermentation lock, in an effort to introduce as much O2 as possible.
my guess is that with really high sugar content recipes this helps alot, so as to not smother the yeast with all the sugar, more room or w/e. I'm sure theres a more scientific explanation out there, but this is just my guess.
and to Lucid if you want to brew your wine quickly, here's some tips for you
1. Make a big starter of yeast to pitch. aka take a quart jar add sugar/yeast and let ferment for a few days or so, then add this to a gallon jug and more sugar/water.
2. Get you some Wine Yeast if you want high alcohol fast, mail order it or trade for it or something, you could easily get someone to send you a envelope of yeast that would look like a letter.

that is ok. i dont shake, i swirl the jug a bit, but there is so much co2 pumping out that im not worried about anything getting sucked in. i use saran wrap as my pressure lock.

Wine was made for centuries with just the wild organisms growing on the yeast.
Out in the country, they still make wine the old fashioned way: mash some grapes and add sugar and water. It tends to turn to vinegar if you don't drink it fast enough or refrigerate it. Personally, I like a little vinegar in my wine, and it's actually good for you.
