possible to home ferment for too long?

what wouldresult?
vinegar?
simplest way to know it's ready w/o equipment?
if brew fizzez when sugar is added that means yeast still alive hence low alc % n fermentation ain't over... ???

dude, no offense, but stop making so many damn threads!  lol. you can post all of these questions in ONE of your threads pertaining to home brewing.

and to answer your question, what would result depends on your level of cleanliness and whether or not you let it get contaminated. you can ferment wine as long as you keep it clean, that is why there are bottles of wine that are hundreds of years old.  the only way you get vinegar is if it contaminates.  i should also tell you that after about 2-3 weeks you should not rely on open container fermentation, you need to rack the wine into a container with either a screw on lid or a cork, while it is still producing moderate amounts of carbonation, pressure is what keeps you from contaminating and the less carbonation you have, the less pressure you have.

and what do you think?  what else would fizz mean when you add sugar??

You can leave a fermenting beverage on a yeast cake in the original fermentation vessel for extended periods of time in fact it benefits the beverage by letting the yeast clean up byproducts of fermentation. I don't think you'll have to worry because you'll probely drink it before its sat to long lol. This isn't the best site for homebrew information I would recomend homebrewtalk.com. Make an account and search for and info you may need. What kind of drink are you making?
