It looks nice and ropey and pure white. Seems fine to me. Dephect is right though, give it the smell test.

If you are concerned about discoloring on a birthed cake, the old q-tip test is usually pretty good. Gently swab the colored spot with a q-tip, if the color comes off onto the q-tip its a contam, if it doesn't you are golden
