The picture in question is a king oyster. That basket that they are growing on is producing interesting fruits, they all have concave tops.

We are doing about 50lbs altogether of the various oysters right now. We should be at 100 by mid september. Maybe 10lbs of the kings tops. The Shiitake and reishi are just starting.

We have been doing mostly farmers market sales, and they have been wildly popular. Unfortunately the markets end soon so we need to start getting out to more restaurants

Mushroom harvest. I'm not trying to plug them or anything but they are a great supplier. I used to get everything from FP but since I am in Michigan it would take forever to get here, MH is in Ohio so usually it's only a few days.

You are right about the humidity thing too. That is one of our biggest issues, having low humidity in the shade house. We are in the middle of a farm field with not many trees around to break the wind. Plus the shade house is made from tarps and a shade cloth so the wind just rips right through it.

The oysters are pretty adaptable to adverse conditions like that, but we are just now getting our sawdust blocks to fruit. I have try to get out there 5+ times a day and mist all of them. I will go and mist then an hour later they are all bone dry again.

I wanted to invest in a misting system but since we are going to be moving everything indoors when the weather turns(a month or so) I figure save the money and buy a fog system instead.

P-thinks: I have been defying the rules and doing G2G all along, with no ill effects. I am starting some plates though to refresh my strains, I think I'm pushing my luck.

It's getting colder now, most of the summer it ranged from 80-85/day and 60s at night. Now nights are getting down into the 50s. I need to move this inside quick.

I'll bet if you let the weeds and grass grow in the shade house, you can have a sprinkler on a timer to wet them down once an hour or so, and then they'll return the moisture back to the air.  I do something similar with my shiitake logs in a shady spot in the woods.  I simply run my sprinkler for a few minutes each hour to wet the weeds and berry bushes, etc., and that's enough to keep the humidity high, especially down low.

My first post to edible, but I have to say that,  WOW!  I looking into mushrooms as a cottage industry. I have 13 ac. and while that's not needed, wondering if u might have advice or direction.  I saw that you referenced, "FP", fungi- perfecti ? Thx  for any feed back.

RR, you I just went through there with a weed wacker and ripped up all the grass and weeds a few weeks ago.

We were having fly and mite problems and I guessed the grass might be attracting/harboring the buggers. Also we had all types of LBMs growing on the ground from all the excess water.
  I could be wrong about the grass encouraging the pests, because they are still around even after the grass is gone and despite my attempts to weed out infested blocks/logs.

Drumjam, well a month ago I would have told you to jump right in it. Now I must warn you; it costs alot more than you would think. And time too, it takes every waking hour(almost) for me to produce 70lbs of oysters a week, working alone.
  Depending on the scale you are looking at and how many strains you want to grow you will need at least 1000 quart jars, and half-gallon jars are nice too. You will go through literally tons of gain, sawdust, wheatbran. Rolls of tin-foil, gallons of alcohol(not wine or beer), coffee filters... it all adds up.
  And now we are having to go into debt to get a winterized place set up. And we are really taking a leap of faith because we don't have a great regular customer base. I spend so much time on growing, not enough on marketing.

  Let me tell you this though, it is all worth it. To not be a slave, to do what you love. That is priceless.


  If you have 13 acres you could make better money on berries(strawberries, raspberries, blueberries), fruit trees, asparagus, hops, herbs(legal ones), raising some live stock. Mushroom growing, to me, has not proved as profitable as I know some of those things are.
