Some Pressure cooker questions.

Ok, my pressure cooker is huge, 23 Quarts.  So my deal is how much water do I need to put in this thing..Seems like if I put enough in it'll submerge the little half pint jars..But if I dont put that much in there it'll never be enough to PC for an hour.  If it runs out of water in there thats bad..things break..metal warps..smokes..smoke alarms go off..neighbors ask questions..

I don't do cakes or little jars....but what you need to do is use a second rack or layer(s) of jar lids to keep those little jars out of the water....The bubbling water would saturate the top of the jars. ~Pixie~

If you have a larger metal bowl, you could put that in there and then put your trivet, then your jars.

Or, you could do larger jars for spawning to bulk and put your small PF jars on top of those.

A two inch depth of water is usually, (imo), more than enough to last ninety minutes. :goodluck:

P.S. I'm jealous, yours is bigger than mine...

^^^^ Definitely add something to the bottom of the PC. When I fill mine for PC runs I add a "shelf" and then fill with water until its about a half-inch up the side of the jars. This half-inch of water will evaporate by the time its up to pressure. After your cool down period, open it and make a note of the new water level. Took me about three runs to dial in my starting level. Didn't say anything about it in the product owners manual.

as others have said raise those jars up! the bottoms of the jars, if they come into contact with water, will "glue" the grains right to the glass making colonization of those parts nearly impossible. also burst kernels are more likely to happen...

I've added some canning jar lids under the rack at the bottom.  It allows for another inch of water so I dont drown my jars.  I think that should be enough.

Don't forget to put foil over the tops of the jars so the drips from the lid don't fall on the jars.
I got a big ass presto and it loses almost no water when it cooks....put the stove on high and keep the weight off till steam is escaping then put it on after about a minute,this forces the air out and pushes out contams.
When the pressure is up to 15 or the weight starts dancing turn down the heat so it's barely moving.the steam stays inside and you won't lose water.you can run it for hours like that and not run dry.(it's also quieter!)
remember to start your time when you hit 15 psi not when you turn on the stove.Add more time for densely packed cookers so all the jars get up to temperature.

One more thing, store your cooker open with the lid upside down, If the rubber gasket is squished all the time you'll need a new one every year. Wash the gasket with warm soapy water once in a while and give it a light coating of veggie oil too.it keeps the gasket in good shape.

Not correct.  We raise the jars up to keep them away from the extreme heat of the stove burner, and to keep water from splashing over the tops and into the jars via the filtered lids.

It doesn't matter one bit if the bottom of a grain or brf jar is touching water.  The water and the steam are the exact same temperature.

You'll want about 1 1/2" of water in the bottom of the PC.  Use anything you have to keep the jars off the bottom.  A 2" layer of perlite even works.  I use a trivet, and if I need more space, I stack jar lids above or under the trivet.

Since you reduce the stove burner as soon as pressure is reached, very little water should escape during a 90 minute cycle.  The only people who boil pressure cookers dry are the ones who leave the stove on high the whole time.

Not recommended.  It will burn if tight against the bottom, and also will heave and ho as the water boils, sometimes spilling or tipping over the jars.  Use something solid.

corelle plates stand up well to cooking, use a layer of jar rings and a plate. when I sterilize syringes, test tubes or scalpels I put them in a corelle coffee cup.

before i moved on to grains once and for all, i would just wrap the entire half pint jars with foil.  I figured no need to risk getting the dry verm layer even the slightest bit wet.

The crucial part about pressure cooking (PCing) is to get the internal temperature of the PC to a certain temperature.  Once the water in a PC starts to boil under pressure, you don't need to keep your stovetop on the highest setting.  All you need to do is to keep the setting high enough so that the water inside the PC is still boiling.  PCs will keep enough steam in to hold the pressure and the steam will be as hot or hotter than the boiling water (121 C for 15 psi).

I have tried PCing my pasta just for fun and if you use enough water to PC a bunch of pasta (say a half full PC) and keep the stove on the highest setting, the PC goes nuts in letting out the steam.

For simply sterilizing, you could probably get a PC to hold the temperature for a few hours without losing much moisture, as long as you keep an eye on it.  It's pretty easy to tell if the water's boiling inside the PC (hold the handle and you can feel the distinctive shaking).
