Very good points - as arguably the most important ingredient in these cakes is the crab, and that accounts for not only flavour but texture as well. As for my veggies, I will defend that they were quite uniform and small, but given the closeup macro shot it may not have seemed as such. In terms of the crab, indeed the lumps were a little smaller than I'd have preferred (about 1cm in diameter), but all I had to work with at the time was canned lump meat and that's how big the lumps were.
There was no plain egg in the mixture (only used as a wash afterwards), but I do feel as hinted above, that I went a little heavy on the mayo which in turn tended to homogenize the mix a bit in and of itself. Nevertheless, the flavor was right on par, and the cakes on the whole came out incredibly tasty, flakey & delicious (not at all pasty). I have in the past served these with a hot mayo sauce constructed from fresh mayo, dash of lime/worcestershire, chives and ground cayenne pepper. That indeed is some good shit!
It seems that every time I revisit a recipe, some little things seem to change (often for the better, but sometimes as simple substitutes for ingredients I may not have!).. this is only the third time I've cooked crab cakes and I thank you for the constructive criticism.

Geokills- Excellent presentation, Great photos, Obviously spent time/energy to put that together. I make these wonnerful cakes with fresh crab right off the boat- Dungeoness crab no less- and they are to die for. My recipie is simmilar to yours, although I would vote for a smaller dice. Other than that, You Rock!! Peace

Thanks for the kind words!.. and fresh Dungeoness off the boat
Are you a fisherman workin' off the western coast of North America? If you are, I hope you'll share some pictures and any "off the boat" recipies you might have handy
Barring that, I live on the western coast of North America - want to show me some proper fishing?

I live 15 miles from where the boats come in, and they sell fresh cooked ( right in front of you ) in town. You wouldn't catch me out there for all the shrooms in the world!! $3.99/ lb retail, and they earn every damn penny of it!! In fact, the season was delayed because the fisherman couldn't settle on a price from the " monopolized " processors. They finally got $1.50/ lb , and we got fresh crab- over 1 month late!! Pm me with details on western coast, there, Geo!! Peace

I made these lastnight with salmon instead of crab meat.
very good! I didn't make a dipping sauce but if I make them again I will make a cucumber dill sauce or something like that.

I just had the best crab cakes I've ever had at Mitchell's Fish Market last night.
Great restaurant.

1 # crab meat (anything but claw. i like lump or backfin) 1 8 oz package of cream cheese (Philadelphia brand.. the generic sucks ass) 1 small yellow onion 2 small cloves garlic 1 stick unsalted butter salt and pepper to taste
melt butter in saucepan and add onion and garlic. sweat the onions on low until they're soft and cooked through. add cream cheese and let it melt slowly. add crab meat and salt & pepper. done. serve with some crusty french bread.

I would try to make a shallot/white onion reduction first, with a simple crab base. and like soochi recommended, I would leave the lumb crab for last in the mix, toss it lightly to keep it whole, pan sear and then into the oven, serve with a simple mustard seed béchamel.
