Pastis - definitely worth a shot!

Today I decided to give Pastis a go.

First off, what it is :smile:

In France during the Belle Epoque of before WW1, Absinthe was very popular. But the absinthe ban came into effect, and replacement drinks (without thujone) were formulated. One of the more successful ones was an anise liqueur called Pastis. Today, it is a common French hospitality drink to offer guests, and to drink around dinnertime

Today I decided that I'd like a taste of the replacement absinthe that is Pastis, so I went off to the liquor store and bought a bottle of Pastis Prado





The drink is 45% alc, 90 proof, and alongside alcohol it contains an infusion of licorice, sugar, star anise and a dash of caramel as a colorant.

For Euro 7.50 ($12) a half-liter bottle went home with me.

I decided to observe the recommended dilution with 5 volumes cold water, and decided to prepare a glass Absinthe style: 20ml pastis in the glass, an absinthe spoon and a lump of sugar on top, slowly add 100ml water dissolving the cube from the spoon into the glass, then stir.

its no Absinthe, that I expected.

Despite the low price it nonetheless had an enjoyable taste. What it did, it did well :thumbup:

The louche was extreme, like pouring milk into the drink instead of water, so given that and the price i feared it was a tongue-blistering anise turpentine. But no! The anise and licorice were really well-balanced and not too strong. It had an almost creamy mouth feel. Like I said: what it did, it did well.

I sat in my garden in the late afternoon sun (5-6PM, L'Heure Verte, no coincidence!) and enjoyed a total of three such glasses.
Very enjoyable!

If you are intimidated by absinthe (bad rap, price, potent flavor) but like anise, definitely give Pastis a go, and I certainly can recommend this brand.

Its very available worldwide, there are no restrictions, and it should be around the price of a low-end vodka.

Prepare it was you would absinthe, with a sugar cube to bring out the flavor, but use 5 measures of cold water.

Not something to get pissed on, but a few glasses for flavor's sake definitely are recommended, its a real summers drink for around dinnertime - 7.5%/15 proof when diluted 1:5

Follow up:

For today's Heure Verte, encouraged by my previous experience with Pastis Prado, I decided to move a level up and go for the Pastis by Pernod also recommended by Visionary_Tools, DrOli and xk3m_indica Thanks guys :thumbup:




What a pleasant surprise :smile:

The Pernod looked quite Absinthelike in the glass, both before and after watering. Again I used the Parisian ritual with a sugar cube, and the 1:5 dilution pastis requires.

Halfway through the dilution, which gave an immediate louche, though not as hard as the Prado did, I saw the Pernod dance in my glass like an Absinthe would. For those who have not seen it, basically its a rapid swirling, expanding and contraction you see in the liquid without stirring, as the two phases mix passively.

The tasting.
Where Prado was a clear anise/licorice beverage, the Pernod had a distinct flavor combining a blend of herbs. Tasty stuff, well worth the 40% increase in price over Prado.

Pernod was intended as an absinthe substitute, and though the formulation has changed through the years its still passable as one.

If supply runs low, I'll buy a Pernod over a Prado, and I'll definitely buy again.

I had two glasses over the course of 45min, reflecting on the day, then ended my heure verte with a nice meal, a fresh leafy salad I prepared, as it, after all, is an aperitif.

Thats some seriously good stuff right there, Pastis Pernod.

The only pastis I have tried is Ricard.  I quite enjoyed it. 

As my last bottle of Absinthe has run dry, perhaps a Pastis is in order. 

I'll admit I have been quite curious to try Pernod.
