The market is saturated with all sorts of crap at sometimes outrageous prices. It is important to realize that a lot of "Absinthes" you can buy quite often have nothing to do with real Absinthe. Here's advice on which kinds to buy, at what price, and how to prepare it. The preparation is detailed in the attached video.

OK, here goes.

Absinthe can be bought in bottles of 0.1, 0.2, 0.5 and 1 liter.

For liters, you can expect to pay $50-$150. Since a serving of absinthe before dilution measures 20-30ml, this boils down to $1-$5 per glass.
Here are brands that come highly recommended:

DUPLAIS (Balance, Verte, Blanche)
FRANCOIS GUY
HELFRICH (Verte, La Blanche)
JADE (Edouard, Nouvelle Orleans, PF 1901, Verte Suisse)
LA VALOTE (Bovet, Fornoni, Martin)
LASALA (spanish Absenta, can be had for $35/liter)
SEGARRA (spanish Absenta)
UN EMILE 68 (also their La Blanche)
VERSINTHE (Verte and especially La Blanche)
VERTE DE FOUGEROLLES

These 20 Absinthes from 10 houses all are top notch quality, contrary to the extensive list of crappy or even false Absinthes. You can expect to pay $75 a liter on average.

As you can see there are two kinds of Absinthe: Verte (green) and La Blanche (white). Both are traditional. Basically the distilled Absinthes are La Blanche, and when additive herbs are steeped into it it gains flavor and a green color, producing a Verte.

If you have not a clue which to select my personal choice for the beginner would be to buy a 0.5 liter bottle of Duplais Balance (costs about $35, 15-25 glasses) which is a rather good Verte absinthe, and to buy an absinthe spoon with it.

You can use a white wine glass to serve Absinthe:



Make sure the glass can comfortably hold 130ml (30+100) or 90ml (20+60) which your Absinthe requires, and that it is fairly wide so it can fit an absinthe spoon. If you want to improvise entirely, a metal tea-strainer can be put on the glass to hold the sugarcube, and a teaspoon can be used to stir the dilute Absinthe afterwards.

An Absinthe preparation that's good for all kinds is to take a wine glass, pour in 30ml (20ml) of Absinthe, then pour 100ml (60ml) icecold water over one sugar cube on an Absinthe spoon, then stirring until all sugar is dissolved in the dilute Absinthe. Upon diluting, most good absinthe turns cloudy (the "louche") or even becomes so cloudy as to become non-transparent. This is usually a good sign, whereas absence of a louche usually is a bad sign.

You drink Absinthe by taking a sip, and spreading it through your mouth for some time before swallowing. Let the aftertaste linger before you sip some more. It is all about the taste, and a good Absinthe has a lot of taste to it. You should relax and take your time for enjoying Absinthe - if a glass lasts you at least twenty minutes before its empty, you are on the right track. Absinthe is not for chugging, and isn't about getting hammered either.

I cannot stress enough that Absinthe should always be diluted with water, 2-5 parts of water to one part of Absinthe. Drinking it neat is like drinking lemonade syrup neat: you can't expect it to taste good that way. Adding one cube of sugar is most common, some add two and others none. Sugar helps to bring out the flavor.

It's important to realize that Absinthe, real Absinthe, is a drink with often a strong anise flavor to it. If you don't like anise, chances are you won't like Absinthe.

Absinthe is best reserved for before or after dinner, or at the close of day, alone or discussing with friends. I recommend against drinking more than three glasses on a given day: if alcohol becomes a factor it is best to switch to a less refined drink better suited for stiff drinking. Absinthe is too expensive to get drunk on, it has too much flavor for continued drinking, and may give rise to a fiendish hangover if drank in excess. For the frequent drinker, one glass of absinthe a day is the most you should drink of it, and preferably more days without absinthe than with to keep it special.

The only absinthe I have ever had was Hills, I bought it legally when I was in Ontario.

Hill's, King Of Spirits, Pere Kermann and Sebor - don't drink it, it's rubbish and most often unauthentic.

really, Hill's is one of the very worst.

Yeah I wasn't really impressed with it. I have always been fascinated with Absinthe though, and I actually have about 15 Wormwood plants growing in a little patch in my backyard. Ill probably collect all the leaves before it gets cold.

I was thinking about building a small still and brewing up some absinthe with all the foliage i gather. Most of the recipes I've found online seem pretty straightforward.

BTW, can you legally buy Absinthe in America through online distributors?

If you're certain it's Arthemisia absinthium then by all means do! Home-distilling your own absinthe is very rewarding!

If you do it right it is very easy indeed. You might even have all you need already in your kitchen:





The Wok Still is excellent for the distillation of absinthe because it is the ultimate Pot Still, and that's what you would need.


How Wiccan Does It:

Turboyeast/nutes pack + 6kg white sugar + 21ltr water --ferment 2 days--> 25 liter 13% alcohol

Decant the 13%alc off of the yeast, settle again and repeat.

24 liter 13% alcohol --wokstill--> 6 liter 50% Alcohol
6 ltr 50% Alc + 1.5 ltr water ----> 7.5 ltr 40% Stock Alcohol (storage stable, nonflammable)

7.5 ltr 40% alc + herbs --steep 24 hours--> 7.5 ltr crude macerate

7.5 ltr macerate + soaked herb --wokstill--> 5 ltr Absinthe (at least 55% alc)


So, in other words, more elegantly:


Turboyeast-pack + 6kg sugar + water + herbs --procedure--> 5 ltr Absinthe 55% ($5/liter)


After you made your Absinthe, vigorously shake it in a half-filled bottle to absorb oxygen (good for aging, the Oxygeneé process) and store it in well-filled bottles in the dark at room temperature or cooler (wine cellar) for at least 3 months to age. Upon aging, it will only improve more. Store standing up in the dark.

Modern whiskey breweries are switching from glass bottles to PET for convenience and to prevent bottles breaking with handling. Indeed, the 2 liter C*ca-cola PET bottle is suitable for storing stock alcohol as well as Absinthe. One simply refills the glass/crystal decanting bottle of their bar from the PET storage bottle in the wine cellar.

Funny you should ask if they for sure ARE wormwood. I actually bought seedlings from two different sources. The two specimens i received are clearly different species. BTW I am making a new thread that contains this same stuff so more people will be able to see it, its called Wormwood ID request, but you'll probably see it anyhow...

Thanks for the brewing suggestions, your recipe will definately create a more refined product than the crude distillation recipes I have found so far (Granted some of what is growing actually is wormwood).

Please note how Absinthe herbs can be bought separately at herbalists shops (online or offline) and are all unrestricted even in the US.

If brewing is too bothersome for you, you can simply buy cheap unflavored 40%/80 proof vodka (or everclear and dilute) and use that to soak the herbs in and directly move to distillation the next day.

Lucid is one of the brands best not bothered with. It is however not cheap :smile:

A much hyped-up product that isnt too bad actually is Marilyn Manson's brand "Mansinthe". Its actually good, its said. Still for that kind of money you could get a Duplais or a Verte de Fougerolles, which are distinctly better.

Look for RL shops that sell herbs in your surroundings. If you can't find it offline there are online merchants.

Usually its better to use generic herb merchants than those who sell kits, due to price differences, though there are good one-stop absinthe herbs shops.

Herbs you want to buy at least a kilo each of:

Wormwood herb
Aniseed
Fennel

I can REALLY recommend this recipe for Spanish Absenta which I tried as a pilot batch.

Its VERY good and on standing ages wonderfully.

It also uses relatively small quantities of relatively common herbs.

Do you know anything about Doubs Absinthe?

I went shopping yesterday and they only had three brands, Green Fairy, Dr Jekyll, and Doubs. The first two were czech, and Absinth not Absinthe, so I bought the Doubs which won a couple awards and was French so seemed like the best of the three. Interesting to hear what you think about it if you know it.

I had never tried any Absinthe before this one, was nice, very strong anise, only 55% alc so a bit weak perhaps. Feeling pretty seedy the day after.

I've been into absinthe for a long time . For one, stay away from the czech brands and any brand that brags of high thujone levels , those are all crap brands . If you're just getting into absinthe and want a high quality absinthe without spending a fortune go to drinkupny.com and order from there . You get free shipping from them on orders over $99.99 . Of the brands they carry , Lucid,Kubler and St George are good entry level ones:

If price isn't an issue I *highly* recommend any of the Jade line of absinthes . The Edouard is a *great* one to try for your first buy .

http://www.feeverte.net/ is a great place to talk about *real* absinthe and has a great buyers guide. There you can also sign up for special offers on pre ban absinthe as it comes up . This stuff is many many years old and is some of the finest ever made , but a sample will cost ya a lot.
