wow! great finds! Just out of curiositi, what part of the country are you in if I may ask. Excellent finds. How are you going to preserve them?
I'm thinking about simply hosting a little shindig since the chants don't preserve well without precooking -- which i just don't care to do.
If the chanterelle party happens i'm thinking of setting up an outdoor sound system at the farm and forcing everyone to listen to cheesy Roger Miller music while dining haahaa
P.S. you don't want to be like me. I'm a social retard prone to isolating and talking to myself while simultaneously inhabiting states of hyper-focused rapture and extreme detachment... Maybe it's all the coffee

Oh god i am just like you i drink tons of coffee and have horrible social anxiety oh god oh god...I im in north west GA near the mountains. Im just gonna cook them up and store them in the freezer i was told this is a good way too do it by dannyglick.

So it's two million pounds now... well that's just god damned greedy.
Here is a method for preparing chants that seems to be really good and highly adaptive.
Heat up a bit of oil or butter in a pan, add diced (or simple broken) mushrooms, cook a few minutes until they just begin to soften, then add an appropriate amount of garlic -- if you have a press use it on a couple fresh cloves. While the mushrooms and garlic are cooking over reduced heat, mix about 1/4 cup of dry red wine, an abbreviated splash of something like Bragg or soy sauce, stir freshly diced or dried thyme into his liquid mixture. Then pour the liquid over the mushrooms and cover the pan, allow it to simmer five to ten minutes. Serve the mushrooms as a side dish or to mix with a cooked grain, veggie, and bean dish. It goes well with just about anything.
