Simple steak and mushrooms

Just go to the store, picked up a thin cut of porterhouse.



Hot pan, butter, preseason meat with salt and pepper both sides


I also take out some whole baby portabellas, season as well

Fresh rosemary, 2 sprigs, and 3-4 crushed cloves of garlic.

sear in hot pan, sit it about 3 minutes on each side.


i like to spoon the butter over it, letting it absorb the hint of rosemary and basting the mushrooms.



it's quick, hardy, but just make sure not to overcook the meat.

i like to sear my steaks more than that, but i bet it tasted awesome. you cant beat that flavor combo.

Not a great cut here but it came out just about perfect.  In fact everything on that plate is pretty much cooked to perfection.  Broccoli steamed in garlid and salt and pepper.  Look how fluffy that potato is and the steak, really nicely seared and a perfect medium rare.

sounds pretty good. i might have to try this. should i put the rosemary and garlic in the melted butter first??? i would imagine i would.. just making sure.

the way i do it is this:

add butter, cracked garlic clove and rosemary sprigs to a cold pan and heat slowly. when butter melts and stops making sounds, its ready to cook in. add steak and baste the steak with the butter from the pan, using a latge spoon. if you want to sear (high heat) then remove the garlic and rosemary before adding steak so they don't burn.
