clearish/brown gelatinous on cakes...what is it?

I have this clearish/kinda brownish "gel" growing on my cakes. I pressure cooked at 16 psi for 40 mins, used a hepa fliter fan over my work area and incubated at 83 degress. The gel seemed to grow mostly on the jars that colonized really fast. It also seems like it was "growing out" and pushing up against the inside of the jar. It's actually kind of hard to the touch but slick. is this bacteria contam?

From what I can see around the top lip of the cake its deformed mushrooms but I cant see it like you can fruit it to me it looks A-OK

"brown, gelatin looking" growth on a cake is usually matabolites. Especially if they have been in the jar a week after they were fully colonized and ready to be birthed.
