Best way to dry a block out ?

I'm about to harvest my first ever grown batch of shiitakes . I was told to expect many medium sized mushrooms but instead got 8 HUGE ones . After I harvest them later on today I'm supposed to let the block dry out a couple weeks .
Whats the best way to do that ? Just set it on a plate on a shelf somewhere ? Are there any recommended/preferred ways of letting a block set to dry ? Might sound like a silly question, but I don't want to do anything that will set myself up for contams on my next flush. Thanx !

Paul Stamets , author of GGMM. I followed his suggestion of cold shocking for a week , soaking for 24 hours , putting in fruiting conditions , then after harvesting the first flush let dry out for around 10 to 14 days. During this period of drying they are supposed to be storing nutrients for the next flush. After that resoak and fruit again . ((edit: In Stamets newest edition of GGMM he recommends 7 to 10 days of drying , in an [older?] booklet of his which only concerns shiitakes he says 10 days of drying in one part of the booklet but 2 weeks in another part of it , so I'm guessing this is a general and not strict time frame. ))
RR has mentioned this as well. When someone was talking about shiitake fruiting temp and letting them dry out for 7 - 10 days RR responded :
"............. Shiitake prefer a temperature in the 15C to 18C range. They do ok up to about 20C and then performance falls off. The 'rest' period you're using is about the right amount of time. Letting them dry out during that time helps to avoid contamination, which is a real problem with wood based substrates, especially with trichoderma."
I've also been following RR's suggestion of rinsing the block directly under a faucet every couple days while in fruiting conditions to help prevent trich from getting a hold and to cycle humidity .
I was wondering if I should let them dry out in the fruiting chamber or out of it in the open air . The fruiting chamber has high humidity so that would slow down drying which I'm not sure if that would hurt. I could turn off the humidity pump if I wasn't fruiting other things in it as well. I haven't gotten any suggestions yet so I suppose I'll just finish harvesting and let it set out in the open air on a wire rack for 10 days.

open air sounds good to me man, the block is fully colonized. so in a clean environment i reckon itd be pretty difficult for contams to mess things up for you! goodluck.

Allow the blocks to dry slightly, but remember not to allow them to completely dry out. A shelf or even in the fruiting environment is fine, but hold off on misting during that time. After the resting period, soak for 24 to 36 hours in cold tap water. RR
