A cool trick I learned on this board is to use the deepest pot you can find and keep the cakes all the way on the bottom. The extra water pressure can help shove a little extra water into the cells.

Yes, more submerged, the greater the pressure. The mycelium absorbs the water via osmosis.
If you have your cakes submerged enough, it can reduce dunk times quite a bit too.
