It depends on where you live. There are nations where you can't do as much as brew some beer, and nations where you can pick up distillation units at every hardware store.

Always comply with local laws and stuff.

It must be said however that if you just make a few bottles a year for yourself and a few friends, it is very low profile.

yeah, just dont distill some absinthe outside on a busy street and you are pretty safe from getting caught doing it.

getting caught doing stuff like this is like getting caught jacking off, you must of fucked up real bad, and thats all there is to it.

Two days ago I had a glass of the same batch of Absinthe, now aged over 1.5 years.

Its flavor smoothened out a great deal, but nonetheless I found the Anise particularly to be very dominant.

I'm thinking of distilling another liter of the stuff and this time I will make the herbs in these proportions:

Absinthe d' Pontarlier v2.0



1.5 liter 40-50% alcohol

25gr wormwood
40gr aniseed
40gr fennel


soak overnight in the dark

distill to make 1 liter

age at least 6 months

They still make absinthe in Pontarlier and every year hold a festival to commemorate "the green fairy"

For the coloring herbs the ones used in Pontarlier:

Hyssop
Petit absinthe (wormwood)
Melissa

of course they add color but the additon of the petit absinthe is something to keep in mind, as true pontarlier absinthe is very strong

They recently had an episode of Gourmet's Dairy of a Foodie on PBS where they went to Pontarlier to see it's production and talk about the history. Very interesting.
