Pretty easy to grow on woody substrate, such as sawdust, however, indoor cultivated ones taste quite unlike their wild counterparts!! The wild one I ate was delicious, and then before trying my second Hericium, my friend said it wouldn't be as good because it was cultivated. I was skeptical, and he explained that the cultivated ones were less dense, less juicy, and didn't have as awesome a flavour. I tried it, and although he is usually very very wrong, he was not this time! It totally wasn't the same!
Which leads me to suggest outdoor cultivation (perhaps using plug spawn in the same type of wood they were originally found growing) to those interested.

Hmmm very interested. Well, thanks for that. Hopefully I'll find one again. I knew when I saw it that it was edible! It's was begging to be eaten. Well if I ever find one again I'll be sure to grab a bit for cultivation and experiment with it a little.
Perhaps the taste of indoor cultivated specimens could be altered depending on the nutrients given to it?

That is true. Oyster mushrooms are the same way. Grown indoors on straw they taste entirely different from the wild ones picked off of Elm. A good method for either is to select the wood you want it to grow on, slice a section of log a couple of feet long, insert plugs and place the bottom portion of the log into the ground, perhaps in a garden. Keep moist and wait.

You don't mean Hypsizygus ulmarius, the Elm Oyster, do you?? Because that is a completely different species from the Oyster Mushroom you pick up at the grocery store, Pleurotus ostreatus, and would certainly account for the difference in taste.

Ahhh, well I imagine that anywhere up around that way it would be growing. There's a lot of rainforest up your way. Perhaps try Borders Ranges or the lower slopes of Mt Warning. Anywhere where there are some decent old-growth type trees. The rainforest in Werrikimbe was very open under the canopy, with numerous large treess making up the majority of the vegetation. Not very much understory at all.
