noob question about pasteurization

So I'm going to try blue oysters. To pasteurize coffee grounds and straw, using a pot within a pot, um...
Do I put the substrate into bags or just in the inside pot?

Yeah. Late last night I figured out the answer to my question after reading about horse poo juice dripping on people's shoes...
I need to spend more time here than in the Pub. I just discovered I have to go to Walmart for needles.

More noobishness. Didn't look closely into my syringe bag from Sporeworks. Needle is included. This weekend I bought a Cool Mist, a "Martha" and a propane cannister for my turkey roaster [so I can finally use my All American Pressure Cooker that was too big for my glass-top stove]. I also got a bale of straw and dragged out my six garbage cans of alder chips and two garbage cans of coffee grounds.
I'm sure hoping I get some mushrooms going this summer. :laugh:
