Any mushrooms like Red Pine as substrate?

I've recently come into 3 huge red pines that were taken down during an excavation project. I can't burn it in the fireplace so I'd like to use it for substrate. Anyone have any experience with these? I was thinking maybe Chicken of the Woods or Cauliflower...
