I always thought having the patience to stretch was better. That way if you change your mind you can stop, or downsize.
How was the septum? I actually like that piercing (it can look fucking hot on chicks.) I went with my friend once to get his and he said it sucked, they hit a bunch of cartilage on him. He didn't even get to show it off, always just had a spacer tucked up in his nose, what a fool.

I HIGHLY suggest stretching up from an 18 or 16 or even 14 gauge. That way, when you decide to take them out, they will go back to a small hole, rather than one you can see through.
Dermal punching will give you the instant gratification you are looking for, but it will NOT close up later on. A needle is much more gentle, shaped like a V at the end and gradually makes the hole, whereas a dermal punch is a flat circle that literally punches your skin like a hole punch does to paper. I stretched my ears, so I can't say if it's more painful to dermal punch, but I think that's a pretty accurate assumption.
You should go up just ONE gauge at a time, and wait a month or two for them to heal. Sometimes the smaller gauges heal easier, but generally, once you get to 10g, you definitely want to be sure and wait that month between stretches. It is absolutely vital that you use a taper to stretch your ears rather than just shoving in jewelry of the size you want. You can blow out your ears by stretching too fast or by not using a taper or not using a lubricant to stretch. (A blow out is when the skin tunnel, also called a fistula, is pushed out rather than stretched -- this causes scar tissue to form, making future stretches harder, and when you decide to retire your gauges, your lobes might not close as small as they otherwise could.)
Some people also say that stretching beyond a certain size may make it nearly impossible for your ears to close back to an 18g (that's the size most people are pierced with when a gun is used). After leaving my 2g jewelry out for a month, my ears closed up to about an 8 when I decided I actually did still want my ears gauged. I'm sure if I had left them out longer, they would have gotten even smaller. I've seen people who had 0g and 00g with somewhat normal looking lobes, maybe like 10g size holes. But regardless, it's highly likely that you're always going to have a skin tunnel through your earlobes after you stretch them.
Regardless of what you decide to do, do not go anywhere where they will use a gun to pierce your ears. Getting your ears pierced with a gun is like asking for a blow-out and healing trouble. Make sure the person who does your piercings knows what he/she is doing, and make sure you feel comfortable and safe. You can find reviews on places if you just look around online. I know Tribalectic has a list of shops with reviews. It might be good to look around at those boards for a while, too, and BME is another good source, but you have to pay for a membership.
The last thing I have to add is that the healing process can hurt more than the actual piercing. Be sure to take good care of your lobes, sea salt soak them and try not to bump into them or sleep on them. They will probably swell, and the sea salt soak is great for calming, as well as helping produce new skin cells. Remember that your piercing is actually a wound, and to heal it best, you want to be sure you're eating right and feeling healthy. Some piercers might even suggest taking a vitamin supplement, but I haven't ever taken them and my piercings have healed fine. Basically, just take care of yourself and be smart about it and you'll be fine!
And yay for stretching!

I stretched my ears up to a 0g, then got bored with it and let them go back down to an 8g. I mainly did it out of curiosity, but its cool to throw some small earings in when I feel like it now that my holes are really small.
