After playing with a variety of knives, over the course of my life I've finally found one that feels amazing in my hand. Its the elite santoku 6.5" by Kershaw Shun;





It just arrived last night, and I've been chopping up all the shit in my fridge, just for fun. I've used everything from the finest Wüsthoff, to some vintage Chicago cutlery. The thing I like about japanese still, is not only is the Damascus a very nice touch, but the edge is honed to a 16º angle, unlike most western edges that are set at around 20º. Making for a crisp clean cut with very lil effort.

kershaw does make some good knives, and i use a santoku blade almost exclusively, it's great.

benchmade also makes some kick ass knives, some of the best i think...

Shun's are great but if you're not used to japanese style knives then sharpening them might be more of pain than previously thought. Traditionally made japanese knives are thicker than european knives so the edge has to be sharpened at a steeper angle.

I'm personally saving up for a deer stag handled Nenox S1.(about $700) This is the brand used by Morimoto and one of the last companies in Japan to make their knives in the completely hand made samurai tradition. Absolutely the best and longest lasting edge retention of any knive made in regular production.

For the less extreme and for those that want something that most people may not have try googling "Henckels Miyabi" JA henckels recently acquired Miyabi knives in Seki Japan and sell a line with steel engineered in Germany and the knife itself handmade in Seki. Former Japan Iron Chef Rokusaburo Michiba was intrumental in designing the entire product line.

Currently I switch back and forth from a Henckels pro S santoku (for less delicate things) and a Chroma Porsche design santoku. (Being a pastry chef, the "chef" knife doesn't play as important of a role as my ice cream machine :smile:
