 udon & woodear soup

real simple, season and sauté some cremini's and about two handfuls of fresh woodear, and about a baseball sized videlia onion, some shallots, a bit of garlic, get some nice color on the shrooms and onions, once you get some nice caramelization going on, de-glaze with some red wine, reduce, add some soy sauce, splash of hoisin sauce, add some thyme, a few bay leaves, a few whole dried thai chili's, reduce, then add about 3 quarts of vegetable stock, add some spinach, taste it, re-season with some salt and pepper, prepare your udon noodles, and serve immediately.

They are very rubbery, and they tend to get bitter the bigger the shroom gets. When you find the fresh in the wild, the smaller ones that are in prime condition, are so delicious, when they are the freshest.,
