special for tonight is; blue fin tuna, pan seared with roasted sesame seeds, and ginger fused oil, homemade pane piano, & a soy ginger & citrus reduction ontop.

not really sashimi if it's seared though, is it? Or does that just have more to do with the cut?

No, that's not the cut - the grey/whiting of the edges is definitely from heat being applied.
Most asian eateries around here would call what is pictured in the first post a seared (rare) tuna steak.
Never have I been served sashimi that has underwent any amount of cooking.

Well that's cool, it looks pretty damn delicious regardless of what ya call it!
I recently had a great sauce pairing with that type of food, a wasabi infused sour cream. :thumbup:

Another idea that I must give credit to my friend Sonny in Berkeley.
  • Take 1.5cm chunks of sushi grade tuna, marinate in a soy / teriyaki sauce for 10 minutes.
  • Brush some wonton wrappers with oil and bake until crispy.
  • Blend/grind up Edamame and wasabi to taste.

  • Top crispy wonton crackers with some of the mildly spicy green paste and a chunk of the sweet salty raw tuna.

  • Drool for more... :tongue2:

Cool, I'm a sucker for any kind of wasabi infusion. We recently ran some yellowfin filet's with a wasabi infused potato mash, topped with a soy/ginger reduction and sesame garlic sautéd spinach.

See around here, in the midwest, its really hard to get customers to be intrigued enough by exotic seafood preparations. But its fun to play around especially with fresh fish and delicious ingredients.
