Chef Longbone's Chicken Enchiladas!!!!
Poblano and Tomatillo green sauce
4 roasted poblano peppers 4 roasted anaheim green chiles 2 roasted jalapenos 8 tomatillos 1 yellow onion 4 cloves garlic roughly chopped half bunch of cilantro 1 quart chicken broth cumin garlic powder pepper mexican oregano
First roast, peel and de-stem all peppers. Second, saute tomatillos and onions over med-high heat in a little bit of oil with salt, pepper, garlic powder, oregano and cumin. Once they have charred up a bit add the chicken broth, garlic, cilantro, roasted poblano, jalapeno and anaheim chile peppers to the pot and let it simmer for about 20 min. After simmering, blend sauce in small batches to desired consistency. Taste and reseason sauce with more cumin ,oregano, and salt if necessary, keep on going until it's right. Hold finished sauce on stovetop on low until ready to use.
Chicken enchilada filling
shit, i'll type the rest tomorrow i've got major sleepy face
