Problem with Enoki, is that they require a lower fruiting temperature.

Nah man, my straw shreds and pasteurizes itself, then BOOM mushrooms come out. And this weekend, my pressure cooker is gonna cook 3 batches of jars for me while I eat candy and play xbox.:D
I hadn't planned on growing mushrooms for a living. I'll have a degree in horticulture in 2 yrs, coupled with 2 years of mushroom growing experience. You think that will look good on a resume? Maybe it will supplement my income in the future? In the meantime I'll make as much money off it as I am capable of($32 so far ) I'm not discouraged or intimidated by hard work. I'm anticipating a LOT of work just on this small grow.

there's 2 more IMPORTANT points to consider--location, and funding.
the nearest mushroom farm in my area is 100 miles away, and they charge $12/lb retail for oysters. Obviously, prices in the PNW are gonna be lower. Also, grocery stores I've checked charge from $8.50-$11.50/lb for shiitakes that don't look very appetizing. So if you're in the right location, you can have twice the income, and little to no competition.
second-you might be able to get a grant from the gov't or a non-profit organization for doing sustainable ag type stuff. This farm I speak of got a $20,000 grant to build their grow house. Anyone considering doing a large grow should start by finding out how to get funding from an outside source. You might be surprised.

In order to make a decent living growing mushrooms... Lets say you want to make $2000 (gross) a month, that 67$ in mushroom sales a day. If you sold them for 7$ a pound, that means you need to harvest 10lbs a day.
If you get 100% BE, you will need to pasteurize 10 lbs of straw a day, or 70lbs of straw a week. This comes out to about 1 to 2 55gallon drum loads full of straw.
you would make roughly 8 30 lb bags a week of straw in order to generate 10lbs of mushrooms a day.
If your only getting 5$ a lb, (easier to sell to restaurants) Then your looking at 13.5 lbs a day.....
now you have your costs...
Straw Electricity Propane Gas (delivery) Automobile depreciation Water Mushroom boxes Bags Spawn Time Various equipment depreciation (barrels, propane bottles, so on) Filters Cleaning supplies
Minus your expenses and thats your net profit.

Don't neglect to get a PT job and an internship as well. It's easy to read your resume through rose-colored glasses when it says "Founder" or "Partner". But IMHO, these resumes and job applications go right in the trash unless the company has a policy of hiring self-employed people. UPS and Fedex are two companies that have a policy hiring self-employed people.

I have defiantly have a negative experience trying to obtain a job when I put self employment on my resume.
In the past I have changed my resume, removed self employment, and I got a job quickly.
Sucks, but you do what you gotta do.
Back to mushrooms, Its a lot of work, but VERY rewarding to own/operate your own mushroom growing business.

got the lc from mushymart, but the main reason they're high quality is because they're fresh, and haven't been handled by anyone except me and my roommate.
And yes, an internship is crucial. required for graduation actually. That sucks about that 'self employed' thing. Maybe I can get class credit for this and use it that way. Or just say I grew em.
I might be harvesting some more by Monday. The 2nd flush of the last 3 logs just happens to be coming out at the same time as the 1st flush on the new ones. They were spawned 1 week apart. This is gonna be the biggest harvest yet. Won't be running 2nd flushes after all these logs are done. Bought some jars yesterday and put filters on em, got seed soakin, and will be pressure cookin all day today. I'm gonna have like 50+ spawn jars growin at all times.

Welp, I harvested 11 lbs over a few days, some was from the second flush. My roommate went on a phone call frenzy and sold 10 lbs, all within 24 hours of harvest. Also sold 1/2 lb to a friend. No new pics, they all look the same. I will have 3 or 4 weeks of down time now, and will make changes to the fruiting chamber. After that, I'll be inoculating 4 logs on a weekly basis.
On a side note, I went mushroom hunting twice this week. Me and a friend found a total of about 70 morels. This pic is the result of our 1st hunt ever. it's a little blurry  no pics of the second hunt, but it weighed out to 15 oz.
