3 tbsp of butter 1 cup chopped onion 2 cloves of garlic 1 tsp of curry powder 1/2 tsp salt 1/4 tsp coriander 1/8 tsp crushed red pepper 3 cups of veggie stock 1 cup of half and half 15 oz can of solid pack pumpkin fresh chives to and/or dollop of sour cream
Melt butter in saucepan over medium high heat. Add onion and garlic and cook until soft. Stir in curry, salt, coriander and pepper and cook for an additional minute. Add bullion and bring to a boil. Reduce heat and simmer for 15 minutes. Stir in pumpkin and cream and cook for about 5 more minutes. Blend every thing in a food processor/blender until smooth follow with garnish pretty tasty with a piece of toasted bread Made a mistake on first try its three cups of veggie stock and no extra water! Enjoy!
