if your into mushroom cultivation just think through the whole process like your dealing with a liquid culture, except its more forgiving. or sort of like pasturizing straw and spawning to bulk or w/e.
and the yeast usually settles to the bottom, so w/e chunks your seeing...well i can't remember your recipe but be careful

Yeah I noticed it's more forgiving. I'm the worrying type though, and murphy's law usually applies to me. When I start a new hobby like this I try to ask a billion questions just to prevent any contams and whatnot. I got mushrooms my first try though, so I'm really trying to make a good brew my friends and I can enjoy.
Don't worry cap'n, I'll keep all my questions in this thread, or I'll create just my own log; whatever's least annoying. I'm not gonna pull a lucid. (No offense lucid )

grab you a couple quart jars hole,tap, foil them, throw in your juice, pc it for 15-30 mintues, add your yeast and you should have a pretty sure thing as far as contams go

you really dont have to go that far..Just make a starter then add this to the brew....Yeast doesn't let most other stuff grow in it..

yah i know i mentioned how brewing was more forgiving, this was just 4 someone who's worried about contams, that is the best way. and brewing with just pasturization but then having poor hygiene with everything else can lead to contams getting in, which at the least would affect taste and im sure other things as well. and with all the crap out there, and new strains of crap growing and being spread each day it might not be a bad idea to do anyway.
im pretty sure the professional brewers pasturize/boil beer in the same vessel they ferment in, they are pretty clean places.
that being said, if you pc too long the same thing could happen in a way, as the sugar would carmelize leading to very low alcohol level and ruined batches if stored for very long.
as we all know from the mushroom cultivation on this site, contams are everywhere and grow fast, unless your trying to grow a specific bacteria that is healthy,add's flavor to brews, they really should be kept out as much as possible. and not only that, but the cleaner you are the happier your yeast should be as they won't have to fight off the other contams and compete for resources. Now thats not to say there arn't benificial contams, but there's no way to contain just them so its best to just keep them all out.
oh and kind of somewhat related i heard good well water also helps yeast as its high in trace minerals and such

Beer/hard cider/whatever should be good for years if done right. I have had 4 year old homebrews that tasted amazing.
It's not the alcohol content so much as the inert, C02 rich environment. If you bottle carbed + conditioned (Full of c02), and were fairly clean in bottling, they will stay good for years and years.
Low 4% alcohol beers can last for years, so it's not the alcohol keeping bacteria away so much....

I currently trying my hand at a variation of this recipe, converting it into a cyser with the addition of 500 g of honey and flavouring it with mulling spice. I'm looking forward to a spicy winter quaff. 
1 gallon 100% apple juice 500 g wildflower honey 1/2 cup dextrose mulling spice (cinnamon, cloves, orange peel, allspice, ginger) champagne yeast (saccharomyces bayanus)

that shit sounds like it will be good. at what point of the brew process will you add the spice? do you know that those spices wont interfere the yeast?

i simmered the spices with the juice and dextrose, then turned off the burner and added the honey (so as not to damage the flavour and health benefits of the honey with too much heat.) I tasted the blend before adding the yeast, and although it was painfully sweet, the combination of honey, apple and spice was perfect. All the sweetness shall soon transform into alcohol and if my guesses are correct, I should end up with a nice dry drink somewhere between 12-15%.
spices generally don't effect the yeast at all, and if they did it would be more likely beneficial than harmful. orange peel, for example, would probably be helpful as yeast thrives in an acidic environment.

sounds great. what are the proportions of the spice? could you be more specefic on the amounts in volume or weight? dosnt matter.

i used a packet of mulling spice, i can't remember the quantity and I don't know the proportions of each spice, but i'm sure you could find a similar blend in similar quantity in any grocery store. its usually sold in the quantity necessary to make one bottle of mulled wine.

I have been apprenticed to master brewer for 4 years and have an all grain set up and have won multiple competitions and judged multiple competitons; I feel pretty justified in asserting judgments. And yes, cider is easy to do. Hell, even good cider is easy do do. I'll make a nice write up either tonight or tomorrow night depending on my schedule.

seriously man, people think brewing is hard. this is to help people get into brewing. i fully support learning how to brew the proper way, i am a mead maker myself, when i brew mead i brew it by the 28gallon batches. so if people think this is easy, they wont have any trouble learning how to brew properly, and hopefully it will inspire them to get into brewing.
sure it doesnt taste like an aged mead or properly spiced cider or anything, but i do it for a quick punch in the face like i said, and i dont see why anyone cant use this to learn how yeast works.
so fuck off and save your glory for the competitions feel free to post something useful like your tek though
