no prison hooch is NOT what im making
people in prison just let whatever standing sugar is left in the brew to ferment, meaning it comes out at like 8% alcohol, and they usually just let it go rotten in order to start fermentation.
im using a yeast that is known for preserving the fruity flavors, and adding sugar until the yeast max's out around 20% alcohol.
therefore ide say this tastes not only better but stronger than prison hooch, they would climb the walls for this.
so while not being "prison hooch", its most definitely "closet hooch"

i brew meads too, but meads take 3 months to ferment, and at least another 6 months of aging before i consider them ok to drink. thats 9 months!!! so while im waiting for that to finish, i like to get totally SMASHED on this Closet Hooch

You should make a mead TEK for those of us who are a few steps beyond this style of brewing. I've been meaning to get into mead brewing for a long time.

i still use premier cuvee even for my meads 
ive got little funds right now, and honey is expensive, wait til this job im interested in comes through, and ill make a photo-documented recipe for various meads that are not only easy but DELICIOUS.
mind you theres no cracking into it early unless you like nasty mead, something about the honey makes it come out rather unpalatable in the beginning. a good 3 months cuts back about 60-70% of the nasties, and by 6 months its worthy of being called "Syrup of Gods Vagina"

so yeah, from the day you start to the day you drink it, should be about 9 months, or 270 days.
it really sucks waiting that long, thats why i make hooch most of the time instead, and rarely crack open a bottle of mead except on occasion.

That sucks for newbs like myself. If I screwed up a batch of mead I'd have to wait another 9 months before I could see if I did it right or not.

whys that? just start a 1gal of mead every month, and by the time 9 months catches up to you, if u screwed up, just start a new one and look forward to checking another in a month.

I made the similar mistake of buying 5 gallons of Ziegler's cider only to find out they put preservatives in it. I wanted Ziegler's because I have used it before and it turned out very VERY well but I didn't remember them putting preservatives in their cider. Anyways disheartened and planning a trip out of town to get a hold of some UV pasteurized cider, I did some research.
Potassium Sorbate only prohibits the yeast from reproducing, so if you already have a strong population of yeast cells, then you are good to go.
Sodium Benzoate is a little more tricky, prohibiting fermentation entirely, or at least by 95%. Trick with this stuff though, is it only works when the must pH is at 3.6 or lower, so a must at 4.0pH, the sodium benzoate will not be activated in. Or so the theory goes based on research.
So... with my newly acquired knowledge, I am going to try this experiment. 5 gallons of preserved Ziegler's cider with a pH of 5.0 (courtesy of calcium bicarbonate) and a charged and running yeast colony.
If it works, there will be lots of nummy, nummy hard cider at the end and it will already have preservatives in it to protect it further once I up the acid back to the original level.
Of course, I intend to only make mine 10-11% alcohol by volume...

what's everyone's favorite way to drink this stuff?
I really like adding a spoonful of sugar and pouring it over some ice.
a couple cups of this makes for a good night
