Hash Browns a la Stoned

Lunch...no pics sorry
3 unpeeled potatoes (skin good), half sliced and diced, half grated.. for fun 6 strips of bacon some leeks 1 red onion shredded cheddar cheese
So I threw the potatoes and chopped onion and a little garlic in a hot pan with some olive oil.. lay out evenly and let that fry on medium high for about 5 minutes, added some salt and pepper, waited until they start to get a little golden.. then I added my chopped leeks and gave it a nice flip. Then I sprinkled on some paprika, and some cayenne pepper.. let it cook on that side for maybe another 2 minutes.. then I smothered it in cheese and added my crumbled bacon bits, until cheese melted.
Serve with ketchup and Frank's

I always think my hash-browns taste funny in olive oil.
I keep very good OO around for cooking, but I can't eat hash browns fried in it.
A strange flavor to me.

So how would you prepare your hash browns? I get the huge EVOO dual-bottle set from Costco, so that's what I'm using more often than not (even though it has a relatively low smoke point).
For deep frying, I typically use canola or peanut oil.

You use olive oil on medium-high? Doesn't it burn off?
