The high density of Oak slows growth but gives good yield per volume. As per tannin content, it varies. The heart wood, sure, is packed full of tannins. Oak branches, like you would use for log cultivation, are great for cultivation.
The center wood of a young tree's purpose is to transport water and minerals up from the roots to the leaves. Eventually, the passages become clogged with tannins and minerals - to the point that the cells die and all that remains is the lignin-reinforced cellulose cell walls. This dead, but very strong (now that it is packed with tannin and minerals) wood is called the heartwood. It takes a long time for mushrooms to break through this even denser, unfriendly wood. I suspect that this is at least as responsible as the roots for why stumps fruit for so long.
Reishi grows wild on heartwood of Oaks, so it can be done. It just takes a lot longer than fresh branches. Eventually (tens of years) later the heartwood can be eaten to the point that the tree becomes (with the help of others) hollow, but can still live for hundreds of years (especially with the help of the fungal immune system)
