onion rings & fried chicken

so if you saw my previous thread...i've been deep frying lately. i think it's good to use my deep fryer at least once a year.

i made an onion ring loaf...quite similar to what you get a tony romas restaurant for a starters. quite easy to make.

3-4 large onions, separated into rings
buttermilk
a tsp of salt
a tsp of pepper
1 cup of flour

soak your onion rings in buttermilk for 30 mins then coat with the flour/salt/pepper mixture.



heat your deep fryer to 170C and drop in the rings. fry until golden brown.



blot your onion rings with paper towels and then bung them into a bread loaf pan. bake at 200C for 10 mins and you get this:




i also made some fried chicken...

soaked the chicken in buttermilk for 2 hours.

dredged them in 1 cup flour, 1 tablespoon paprikka, 1 tablespoon black pepper, 1 tsp garlic salt, 1 tablespoon cayenne pepper. then i fried them at 180C in the deep fryer for 12 mins.



enjoy..it's been a while since i showed anything i've cooked :smile:

OK, now that's awesome!  Waaay better than that deep fried Mars Bar you're pullin' in your other thread! :wink:

Reminds me of my venture with you and T at Roscoe's House of Chicken and Waffles -- all hail the black Jesus.  You know I just found out they have one of those like 1.5 miles from my house in Pasadena?  Not quite the same ambiance as the Hollywood variety, but tasty nevertheless!

And if I may, can I get a HELL YEAH on them onion loafs?  That's my main motive to ever sit down in a Tony Romas!

Looks good!

I have never heard of people letting the onion rings soak for so long in the buttermilk. Why do you do that?

If I want extra crispies I just double roll.

Did you make a sauce for the onion loaf?

not sure why i did that...but it did soften the onions up a bit that's for sure...quite nice texture compared to a batch i made earlier

the sauce i had was tony romas carolina honey bbq sauce..it's actually my favourite bbq sauce and i have 3 big bottles stacked in my cabinet...living outside of the US having those bottles are a luxury :frown:


GEO: we HAVE to go back to roscoe's when we're back in so cal! better yet...let's do carne asada and deep fry lol :laugh: how's this summer sound? me and t wanna do a california road trip...

mmmm onion ring loaf.....


i was in nashville a couple weeks ago to try some serious old-style barbeque with a friend. The place i went to served this massive onion ring loaf as an appetizer.

It was absurdly glutinous.....when you order a soda they fill a small pitcher and stick a straw in it.

I got the "Tennessee trio" consisting of pork ribs, pulled pork, and brisket on a plate, all slathered in home made BBQ sauce

I tried this tonight, it turned out amazing, but instead of wheat flour i used, tapioca flour, cornstarch, rice flour, and xantham gum, along with salt, pepper, and paprika. Best onion rings i have ever ate.

Roscoe's Chicken & Waffles is pretty good, but there's much better, ESPECIALLY if you're lucky enough to live in the Pasadena/Altadena area. Them black folks know how to cook, man!

Yes, Roscoe's is dank. I think it's overrated tho. #13 Fried Chicken breast and a waffle is over $10! Ludicrous!

The "Hawkins" burger consist of three, one-pound ground beef patties. Each pattie has different toppings. Pattie one has 2 Italian sausages with hot chili sauce and cheese. Pattie two has 2 eggs over easy with chili sauce. Pattie three has 1/2 pound of the best pastrami in town with chili sauce. This all comes on a giant bun with divider pieces of bread in between the patties.

Open for breakfest and lunch...
the breakfest burrito could feed a whole house full.




I go to Hawkin's on Fridays for their Chicken Wing Special which is unbeatable! 4 wings, fries, biscuit, and a soda for a grand total of.... $3.99 :drooling:

Thanks for the rec's!  That burger sounds ridiculous.. :whoa:
And while not fried chicken, the breakfast burrito with chili (~$6) at Lucky Boy is great and is pretty hefty.

oh I am quite familiar with lucky boy's breakfast burrito :yesnod:

it is my only choice for food to start a road trip. driving down to arizona, san diego, santa barbara, wherever i go, when i go i :drooling:

the guy that takes the orders at night is so funny, the older balding guy.
