How does one become a UN Relief worker?

I've been wanting to do this for a very long time now - specifically, I'd like to work in Palastinian refugee camps. I've attempted to contact the UN but have gotten no response through any of their "Contact Us" things. I'm considering a trip to NYC to see if I can speak with someone in person.

Have any of you ever pursued UN human relief work? Even an email address to contact would be great.
