My lentils taste like hell. What is a good way to just make a simple 1 cup portion?
Thanks

well, they are kinda like rice, so add something that will flavor them & boil them till they are tender & add salt & pepper & maybe even more water or broth to finsh the simmering.

Lentil Soup 1/2 cup lentils(red, yellow, and/or brown) 2 tblsp oil 1 med onion chopped 1 potato chopped into small cubes 1/2 tsp fresh grated ginger 2 chopped tomatoes (canned works) 2 tsp ground coriander 1 tsp ground cumin 1/2 tsp tumeric 1/2 tsp chili flakes 4 cups water 1/2 tsp tamerind concentrate (brown sugar could be substituted) as far as the spices go, the cheap way to go is to go to a Whole Foods type of place and just buy small amounts of bulk spices. Ginger is expensive. It is by weight so just break off a small piece. Also note that most English cookbooks on ethnic cooking tone down the flavor ALOT! So grow some balls and kicxk it up a bit. In Indian and Thai food ratios are more important than exact measurements and traditionaly, exact measurements aren't really used. Anyways on with it.
1.) Put lentils in a very liberal amount of water and let soak overnight.
2.) Drain. Put the lentils in fresh water and bring to a boil. Simmer for about 20 min uncovered or until tender. Drain well.
3.) Heat a large pan to med heat. Add the oil then the onion, potato, and tomatoes. Cook for about 5 min stirring frequently.
%.) Mix in spices so that everything is coated fairly evenly. Let cook for a couple of min. Add water and bring to a slow boil. Cook until the lintils and potato start to break up. You can then pure this in a blender or food processer if you want. I like to garnish with lime juice.
Indian food uses lentils all the time so that would be a good direction to look. I've had some good French lentil soup as well sao that would be another direction to look.

Take a half a cup of dried lentils and put in a pot with one and a half cups of water bring it to a boil turn the heat down and partially cover the pot and simmer for 20 to 25 minutes. After 20 minutes try the lentils, if they are not done simmer for another 5 minutes.
But why just make a cup, why not make a couple of pounds and eat them night and day. j/k
Recipe for Dhal
cup of cooked lentils as done above 2 ounces of butter 1 clove finely chopped garlic about the same amount of ginger as garlic also finely chopped cummin - 1 tsp garham masala - 1 tsp 1 finely chopped carrot
Throw the above in a frying pan get it pretty hot and stir it around then turn it down to a simmer and put a lid on it and let it simmer for 15 minutes
Serve with sour cream and pita bread.

I like to have it pretty simple.
Adding whole cumin seeds, fennel seeds, turmeric and a little black pepper. Butter too. Garnished with cilantro. Mabey even throw some zucchini or cucumber in the mix.
