 Electrical and water consumption

Just a simple question: Supposing you have a grow room, 9m (30f) wide, 3.5m (12f) tall and 34m (112f)long. How much electricity in KW will it use to cool the interior to 20C (68F)if the outside temp is 32C (90F)(consider 5 air exchanges per hour)?
OK, another easy question: How much water per day will you need to humidify the above grow room into 99%RH if the outside RH is 15% or 70% (consider 5 air exchanges per hour)?
Sounds funny? I need know the answer `cause I am trying to build a business plan.

That's not nearly enough information to go on. It matters how the building is insulated, and how many substrates are in place. It matters if a concrete slab is in contact with the cool ground, or if the building is raised above ground level, which would require more cooling. If the room is full of substrates, it will humidify easily, and maintain temperature easily.
If the outside humidity is 15% and the temperature is 90F, evaporative cooling will suffice. If the humidity is 70% and 90F, you'll need refrigeration at greater expense and energy consumption.

That would be a question best answered by a local HVAC engineer. There is no 'optimum', only 'R' values and a whole host of other variables. I'm an electrical engineer and calculate building electrical loads all the time, but wouldn't touch that one. I know it would be at least six tons of AC, probably more. You also have to figure on a type of insulation that won't waterlog. A shade cloth over the building would help, or a location under tall trees, all of which will effect the total KW load. A heat pump would be the most economical.

A ton is 12,000 British Thermal Units.
A heat pump uses coils buried in the ground, usually hundreds of feet of them. The ground temperature below a few feet is stable, so it can be used to heat in the winter and cool in the summer. I'm sure you can find some info on heat pumps with an internet search. Good luck.

Basically you can calculate how much you need by the square footage.. for instance for 2000 square feet you would need 2.5-3.5 tons for my area...

I think you missed the part about 12' ceilings. I estimated six tons, but if it's hot and humid, could be more. You'll also need to figure the losses from air exchanges, so that tosses the square footage tables for homes and industry out the window.
