Dry Cakes after PC

I'm at a complete loss at this point. All of my cakes are coming out of the PC dry and for the life of me, I can't figure out why. I've even tried adjusting the water content of the Cake (mixture) prior to PCing. Has anyone ever encountered this before? I've done this hundreds of times before using the exact same procedures and never had this problem. It seems to be the most severe where the cake and the glass meet. Any ideas?

If you used a cup of water, a cup of brf and two cups of verm, they won't be too dry unless you pop the weight off at the end of the cycle to let the steam out. If you do that, your cakes will be too dry for sure.

I have seen people here say that they do that time and time again,I run the PC all day when I make jars and I still rather just wait for it to depressurize on its own.You went through the trouble to make the jars,why risk screwing them up in the PC :frown:

i figure the longer the jars are exposed to the heat the better so why waste the leftover heat? I consider it free heat at that point. my cooker has stayes hot for 6 hours after cooking if left to sit.

i was wondering if maybe you have your jars too close to the heat but you said you have done this before so i'll take your word for it.
