I can get 6 1/2 gallon buckets of grape juice. Juiced this fall, all kinds of grapes to choose from. The Bucket of juice costs around 40 dollars. With wine, you can't open it to check it. If you open it up, you let in fresh air and the whole thing oxidizes and the flavour gets f'ed up.

I tried using the recipe in the original post today, except I used 2 gallons of grape juice, and put it in a 5 gallon jug, with 1.5 packets of yeast, and 1 cup of sugar. Its been a good 7 hours and the balloon on top isnt filling up at all.
Is it simply because theres 3 empty gallons in the jug, and the gases are filling the empty space first? or did i screw up?
I guess ill wait a day or two and see whats up.
Advise if yall can.

You can make wine out of anything as long as you have sugar,, yeast and acid... The best wines ive ever made are the ones where ive put alot of effort into them...
That means quality produce and cleanliness..
You can use bread yeast but it's not recommended..
Common mistake people make is trying to make it strong,,, if you put less sugar in you'll end up with something that's weaker but's much more drinkable and you might enjoy it..
best wine i ever made was elderberry and rosehip,,, i swear you could never buy anything like it !

i make my own wine from berries i pick in the summer, you can make very good wine at home and its really simple too. beer is also simple to make , i do that too, i also distill my own 96% ethanol that i drink together with coffee, a drink for vikings

Anybody know whats up with my problemo? I woke up this morning and the 5 gallon jug with 2 gallons of "wine" in it still has a deflated balloon.

Dude it's wine. It's not nuclear fision, somethings take time. You didn't fill your jug all the way, thats cubic feet of gas your wine has to create. Your house is probably to cold for fermentation as well.
The biggest rule to wine, is don't fuck with it.

i was wondering if anyone has tried making wine from apples or pears. I have been thinking of trying to make a pear wine , im sure it works i just wonder how good this wine will be. maybe a combination of both pear and apples would be good.

It takes afew days to get going,,then it'll go nuts for abit. Keep it in a warmish place (about 21C/69F) until it calms down fermenting. Then you can put it in a slightly colder place for the rest of the fermentation.. It ferments abit slower but you'll end up with a better drink.
And yeah, don't fuck with it,, make sure you keep everything sterile. Even the balloons you're using..
It's resistant to contamination when it's aggressively fermenting but later on you could have some problems.. If it looks/smells like there's a problem you can add some more sugar and yeast then put it back in it's warm spot to try to get it fermenting aggressively again..
Pear/apple wine should be nice,, just experiment with afew different brews.. If you use pears use the ripest you can find,, then put abit less sugar in..

It's been years since I've made wine. I do remember that if you want a strong wine, it's best to use a champange wine yeast (they have a higher alcohol tolerance) and to add your sugar in stages. A good acid balance is important too. Banana/fig winw was one of my favorites.

I think if you made it from apples it'd be considered hard cider. I haven't made any yet but I plan to. My Wal Mart has fresh unfiltered cider so that should be fine.
Actually I haven't made anything yet. Yesterday I ordered a mead-making kit. Can't wait for it to get here. I figure I can buy wine here but I can't buy mead in this state (and many other states do not allow mead to be imported and sold for some reason). I have never tasted mead so if I want some I'm probably going to have to make my own. From what I hear the mead you make will most likely be better than any store-bought mead.
I have five one gallon carboys on the way so I can experiment with several different batches. My first will be Ancient Orange and the second batch will be elderberry mead.

Fuck yes!! The last time my wife made wine it was pear and fig and I've never had anything like it.
And like Zepplin said; to get the alcohol content up there you need to use special yeast, I doubt baker's (bread) yeast would get anything past 8% but I dunno. It's certainly better to use brewer's yeast as those little micro organisms have a huge impact on the flavor. You go into a homebrew supply store and you can find 50 types of yeast: ale, lager, top fermenting, bottom fermenting, wet, dry, smack packs, specifically designed for every style of beer/wine.
I'm the beer brewer in the family and I almost always use champagne yeast because I can get an Imperial stout or IPA up to 18% easily. I just have to lock it away for several months because I will certainly drink it before it's aged proper.
Right now I have a hefty IPA aging until my boy finishes his 3 month's in the slammer. It's called "When Jason gets out of jail Pale Ale" should be about 12-13%.
